The Fresh Fish Shop is looking for an experienced and commercially minded Lead Fishmonger & Shop Supervisor to take ownership of our busy Bermondsey shop every Friday and Saturday.
This is much more than a standard counter position. We want someone with genuine fishmongery and knife skills who can create a fantastic-looking shop, serve and advise customers confidently, develop value-added products and help us unlock the shop’s considerable potential.
We are a growing independent seafood business supplying retail, wholesale and online customers across London. The Bermondsey shop has an established and loyal customer base, strong products and significant opportunity for further growth.

The role
You will be responsible for leading the shop across Friday and Saturday, working independently on Friday and supervising a shop assistant on Saturday.
Your responsibilities will include:
- Setting up a fresh, abundant and visually impressive seafood counter.
- Preparing, filleting, trimming, pin-boning and portioning fish to a high standard.
- Serving customers and providing confident advice on species, portions and cooking methods.
- Actively increasing sales through recommendations, upselling and excellent product knowledge.
- Preparing seafood kebabs, marinades, oven-ready products and seasonal specials.
- Making sure the right stock is available for each weekend.
- Monitoring bestsellers, customer requests, slow-moving products and potential shortages.
- Maintaining accurate pricing, labelling, traceability and food-safety records.
- Managing stock carefully and keeping waste under control.
- Maintaining exceptional standards of cleanliness, organisation and presentation.
- Supervising and directing the Saturday shop assistant.
- Sharing ideas for new products, promotions and improvements.
- Providing a short weekly update on shop performance, customer feedback, stock and opportunities.
You will have the freedom to suggest new products, improve the counter and introduce ideas that can increase sales and give customers an outstanding experience.
What we are looking for
Professional knife skills are essential. You must have previous experience as a fishmonger or in another professional food environment involving strong fish-preparation skills.
You should have:
- Previous fishmongery, seafood preparation or relevant professional kitchen experience.
- Confident and safe knife skills.
- Experience filleting, portioning and preparing fish for customers.
- A strong understanding of seafood quality, freshness, handling and storage.
- Excellent food-hygiene and cleanliness standards.
- A warm, confident and engaging manner with customers.
- The ability to recommend products and explain how to prepare and cook them.
- A commercial mindset and genuine interest in increasing sales.
- The confidence to work independently and take responsibility for the shop.
- Reliability, initiative and pride in your work.
- The ability to reach Bermondsey for a 7:00am start.
Experience supervising a shop, counter or small team would be beneficial, although attitude, initiative and relevant practical skills are equally important.
Applications from experienced chefs or butchers with strong knife skills and significant fish-preparation experience will also be considered.
Hours
The core position is:
- Friday: 7:00am–3:30pm
- Saturday: 7:00am–3:30pm
- 30-minute unpaid break each day
- 16 guaranteed paid hours per week
For candidates seeking a full-time position, additional hours are available within our wholesale seafood operation from Tuesday to Thursday. This can provide a full Tuesday-to-Saturday working week, combining wholesale preparation and fulfilment with responsibility for the retail shop.
