The Role
As Sous Chef, you’ll work closely with the Senior Management Team to run a busy, high-performing kitchen. You’ll lead by example during service, support and develop the team, and ensure every dish leaves the pass with the quality, consistency, and presentation HANBAO is known for.
You’ll play a key role in daily kitchen operations — from prep and service to stock control, food safety, training, and maintaining a positive, motivated team environment.
Key Responsibilities:
- Support the Head Chef with the day-to-day running of the kitchen
- Lead, train, mentor, and motivate junior kitchen team members
- Deliver exceptional food quality, presentation, and consistency
- Oversee prep schedules and ensure the kitchen is service-ready
- Cook, plate, and expedite dishes to company standards
- Monitor food quality through regular tastings and checks
- Assist with stock management, ordering, rotation, and waste control
- Uphold food safety, hygiene, and health & safety standards
- Work closely with the front-of-house team to deliver smooth, timely service
- Help create a positive, cohesive kitchen culture built on communication and accountability
- Assist with kitchen opening and closing procedures to the highest standards
About You:
- Experience in a busy, high-volume kitchen environment
- A confident, calm, and hands-on leader who thrives under pressure
- Passionate about great food, quality ingredients, and guest experience
- Strong organisational skills with a sharp eye for detail
- Creative, reliable, and proactive in your approach
- Experienced in training and developing junior chefs
- Knowledge of stock management, food safety, and kitchen administration
- A positive team player with a strong work ethic
- Ambitious and eager to develop your career within a professional restaurant group
