Overview
We are seeking a passionate Smoking Sous Chef, to support our kitchen team in delivering an exceptional BBQ and burger experience at our base, Trenchmore Farm, Cowfold. The ideal candidate will possess strong kitchen skills and a deep understanding of food preparation, kitchen operations, and food safety standards. As the Sous Chef, you will play a pivotal role in stock management, and ensuring the highest quality of dishes served to our customers in person, with a passionate knowledge about Trenchmore Farm, meat, local farming, farm to fork and seasonal veg produce.
The ideal candidate will be preparing our smoked menu for service at the farm on the weekends and supporting our wider burger brand with large prep jobs that we do at the farm (our prep kitchen). The role will be close working alongside our executive chef so it is imperative that the 2 of you can work well together.
Duties
- Help with all kitchen operations, ensuring efficient workflow and adherence to food safety regulations.
- Prepare and serve innovative burgers and BBQ that reflect current culinary trends and classic flavour combinations using some of the best local ingredients.
- Ensure the quality of food preparation meets the restaurant's standards for taste and presentation.
- Monitor inventory levels and assist with ordering supplies to maintain stock levels.
- Collaborate with front-of-house staff to ensure seamless service delivery.
- Maintain cleanliness and organisation of the kitchen area, adhering to health and safety guidelines.
- Handle any customer feedback or complaints regarding food quality or service promptly and professionally.
- You will need to be comfortable working alone, so taking orders and customer interaction necessary in a professional manner.
- Be the presentable and passionate face of our flagship venue, our base, the farm where we get all of our meat from.
Experience
- Previous experience in a restaurant, kitchen or hospitality environment.
- Strong knowledge of food preparation methods, and kitchen equipment operation.
- Demonstrated leadership abilities.
- Familiarity with food safety regulations and best practices in kitchen hygiene.
- Excellent communication skills with the ability to work collaboratively across departments.
- A passion for cooking and creating memorable dining experiences for customers.
- Experience in smoking and BBQ'ing.
- Must have own means of transport.
