Job Summary
We’re Lancashire’s only authentic Texas-style smokehouse. Real offset smokers. Real logs. Overnight smokes. No gadgets, no shortcuts.
We’re looking for someone who wants to own the floor with us — not just take orders, but create the kind of nights that keep people travelling back from Blackpool, Preston, Manchester and beyond.
Salary shown is for 21 years and above with over a years experience. For under 21 NLW applies
What you’ll do
- Be the first smile and the last thank-you. Make every table feel like they belong here.
- Know the menu inside out — especially the smoked meats, bark, smoke rings, sides and what pairs with what — so you can talk guests through it with genuine pride.
- Run your section to a high standard, even when you’ve got 25–30 guests on it and the room is motoring.
- Keep the floor moving on busy nights: take orders, run food, clear, reset, and still make time for a proper conversation.
- Support the bar and kitchen when it gets hectic so drinks and plates land together, hot and right.
- Keep service areas clean, food handled properly, and standards high. We do things the hard way — that includes how we look after the room.
- Handle guest niggles calmly and professionally so they leave happier than they arrived.
- Help turn first visits into regulars and regulars into raving fans.
What we’re looking for
- Proven restaurant, pub, catering or hospitality experience (BBQ, grill or busy floor a big plus).
- Experience running a section of 25–30 guests to a high standard — owning the tables, the timing, and the feel of the room.
- Strong food safety and sanitation habits — non-negotiable.
- Excellent communication and the ability to read a table and a room.
- Ability to multitask in a fast-paced, high-energy environment without dropping the detail.
- Genuine interest in the food: smoked meats, menu knowledge, and being able to sell the story behind the plate.
- Confidence supporting bar/beverage service when needed.
- Warmth, grit and hospitality — the Southern spirit mixed with Northern honesty.
- Someone who takes pride in the work, looks after the team, and cares that guests leave more whole than they came.
The vibe This isn’t corporate hospitality. It’s a family-run roadhouse with real fire, real smoke and a team that actually gives a damn. If you love busy services, good people, proper BBQ and creating moments guests talk about afterwards — you’ll fit.
Join the floor team. Bring the energy. Uphold the standard. Help us create exceptional dining moments that keep our raving fans coming back.
