We are building a butchery from scratch and we are looking for the butcher to run it.
Clay Estates is a working farm and country estate in Herefordshire and the Wye Valley. We raise the animals, we know the fields they came off and we sell the meat direct to chefs, independent shops and households who care where it came from.
Until now our butchery has been done off site. That changes this year. A purpose built unit is going up at Burnt House and everything comes under one roof. Breaking, cutting, curing, packing and the counter, all in one place, all ours.
We are looking for someone who has worked in a farm shop and knows what that really involves. Cutting well is only part of it. The best farm shop butchers know how to turn a whole carcass into a counter that sells, how to make a sausage people come back for, how to cure a bacon worth talking about and how to look a customer in the eye and tell them exactly where their meat came from. WHAT YOU WOULD BE DOING
* Running the butchery day to day and making sure every part of every carcass earns its place
* Building the value added range. Sausages, burgers, bacon, cures, cooked lines and seasonal products
* Developing the counter and the retail offer with us
* Serving customers, at the counter and out at markets
* Keeping the food safety side tight. HACCP, records, traceability, all of it
* Ordering, stock and costings
* Training and leading a small team as we grow
WHAT WE ARE LOOKING FOR
* Solid whole carcass butchery across beef, lamb and pork
* Real experience of value added production rather than an interest in it
* A background in a farm shop, farm retail or a similar direct to customer operation
* Level 2 food safety at least and a working knowledge of HACCP
* Someone who can run things without a lot of structure around them
* Someone already living within a sensible drive of Hereford or settled in the area

Pay: £30,420.00-£45,000.00 per year
