Coco Tang is a unique, independent multi-concept brand that has defined the Nottingham hospitality scene since 2008. Our flagship venue is a hybrid destination: an authentic Vietnamese Kitchen, Speciality Coffee Roastery, and Oriental Bakery by day, and a sophisticated speakeasy and nightclub by night. Now, we are bringing this same level of passion and high-energy hospitality to Manchester for our first historic phase of expansion out of Nottingham.
The Manchester Site
Our brand-new Manchester venue has a very clear "upward" energy—starting with a casual, high-traffic Vietnamese Café on the ground floor and transitioning into a more premium casual Restaurant, Private Dining, and Late-Night Bar upstairs.
The Opportunity
We are looking for a powerhouse Restaurant Manager to be the operational backbone of our front-of-house service. Working hand-in-hand with our newly appointed General Manager and the brand owner, you will be a vital launch lead for this historic opening. You will help build, train, and manage a massive team, ensuring the day-to-day restaurant floor runs flawlessly.
- The Launch Partner: Assist the GM and Owner in the middle and final stages of the Manchester opening, focusing heavily on floor setup, service trial runs, and FOH staff recruitment.
- Service Symphony: Own the floor during peak dining hours. You will ensure the transition from daytime premium casual dining to high-energy evening restaurant and late-night bar service is seamless.
- Atmosphere Champion: You will enforce our obsessive eye for detail on the floor, ensuring lighting, music, greeting, and table standards perfectly deliver the "escape from the city" vibe.
- People Developer: Directly manage, mentor, and rota a large team of supervisors, servers, and hosts, instilling Coco Tang's values into every single shift.
The Ideal Candidate
- High-Volume Leadership: At least 2 years of experience as a Restaurant Manager or strong Assistant Manager in a fast-paced, high-volume premium casual restaurant or multi-concept venue.
- Floor Presence & Grit: You are not an office manager. You are a "boots on the ground" leader who loves the rush of a busy service, commands the floor effortlessly, and sets the pace for the team by working hard alongside them.
- The "Vibe" Architect: You understand that "atmosphere" is a product we sell. You notice the misaligned chair, the slow table greeting, or the lighting level that needs adjusting before anyone else does.
- Commercial Smart Standing: You understand hospitality KPIs, know how to manage a rota to hit labor % targets, and can control stock variance on the floor.
- Calm in the Chaos: You are emotionally intelligent, steady under intense pressure, and act as a reliable mentor to a young, energetic team.
