Head Chef / Kitchen Manager

Sanders Fish & Chips – Pool, Cornwall

Salary: Competitive (depending on experience)

Hours: Full-time, including evenings and weekends

Start Date: Immediate

About the Role

Sanders Fish & Chips is looking for an experienced, enthusiastic and highly organised Head Chef / Kitchen Manager to lead our busy kitchen team at our Pool restaurant and takeaway.

This is a hands-on management role, ideal for someone with previous experience in a fast-paced fish and chip shop or similar catering environment. You’ll take responsibility for the day-to-day operation of the kitchen, ensuring exceptional food quality, excellent hygiene standards and an efficient, profitable service.

Key Responsibilities

* Lead and manage the day-to-day running of the kitchen.

* Prepare and cook high-quality fish and chips and other menu items to Sanders’ standards.

* Organise and oversee all daily food preparation to ensure service runs smoothly.

* Maintain consistently high food quality and presentation.

* Monitor stock levels and place orders with suppliers.

* Manage stock rotation, wastage and inventory to maximise gross profit margins.

* Ensure all food safety legislation is adhered to and maintain our 5-Star Food Hygiene Rating.

* Keep all Food Safety for Business documentation and records fully up to date.

* Maintain excellent cleanliness and organisation throughout the kitchen.

* Train, develop and motivate kitchen staff to achieve high standards.

* Produce staff rotas in conjunction with the Front of House Manager to ensure efficient staffing levels.

* Monitor labour costs and productivity.

* Ensure equipment is maintained and report any maintenance issues promptly.

* Lead by example, creating a positive, professional and hardworking team culture.

* Work closely with senior management to continually improve standards, efficiency and profitability.

Essential Requirements

* Previous experience managing a busy fish and chip shop or similar fast-paced catering operation.

* Excellent cooking and food preparation skills.

* Strong leadership and people management abilities.

* Good understanding of stock control, ordering and gross profit management.

* Knowledge of food safety legislation and HACCP procedures.

* Ability to work calmly under pressure during busy service periods.

* Excellent organisational and communication skills.

* Flexible approach to working evenings, weekends and bank holidays.
