Quay Arts are looking for a Head Chef to join the team in their busy café.
Our busy café is open daily from 9am - 4pm and has a reputation for exceptional service, excellent Island Roasted coffees and high quality reasonably priced meals. The centre often hosts music gigs, conferences/meetings, private hires, and weddings, (amongst many other events), and the Head Chef plays an integral part in assisting with planning and delivering many of these.
The Head Chef role at the arts centre is a fast paced and varied one. As well as delivering the daily menu in our café to a high standard, you will also be expected to bake cakes, plan and deliver meals / buffets within budget for the various events held here, maintain health and safety standards and ensure cleaning practices are upheld to a high standard fulfilling all EHO administration requirements.
Most shifts are day based, but flexibility is essential to accommodate additional business needs as required.
To plan and review creative seasonal menus as well as dedicated catering for weddings and conferencing. •
To ensure our food offer caters for a variety of dietary requirements and preferences and to record and effectively communicate allergen information
- To liaise with suppliers to ensure the best quality produce at the most competitive price.
- To deliver GPM targets on all food menu items and ensure wastage is kept to a minimum.
- To manage day-to-day operations of the kitchen including staff rotas in line with the daily requirements of the business and payroll budget.
- To effectively manage the kitchen team and to provide mentorship to any apprentice staff.
- To ensure that excellent lines of communication exist between the kitchen and café team and the marketing department.
- Set a high standard and good example regarding punctuality, attendance, dress code and to promote a positive work ethic.
- To be conversant with and comply with all statutory regulations for receiving, storing, displaying, re-heating and serving food.
- To attend any training sessions/meetings as may be required for you to undertake your daily duties and to comply with any statutory regulations.
- To manage all aspects of Health & Safety and Food Hygiene of the kitchen and comply with all Health and Safety and fire regulations, policies and procedures.
- To ensure the entire Cafe team are aware of their responsibilities in respect of health and safety in the workplace and have the minimum qualifications and training to work in a kitchen environment.
- To take responsibility for health and safety issues within the kitchen and cafe, specifically hazard analysis and risk assessments.
- To ensure, at the end of a shift, that waste is appropriately removed,dishes, pans and utensils are washed dried and put away and that all cooking areas, work surfaces, display cases and floors are clean.
- To ensure all refrigerators/ freezers are clean, tidy with labelled foods and with out of date/ stale foods removed.
- To ensure the accurate completion of all weekly paperwork - i.e. temperature records, cleaning schedules etc.
- To manage the ongoing control and stocktaking of all kitchen/FOH stock.
- To ensure that all kitchen/cafe equipment is working safely and compliant with manufacturers' guidelines for operation reporting any failures to the Centre Manager.
- To provide a prompt, friendly, customer-focused service at all times. • Work alongside the Centre Manager to ensure catering requirements for all room hires and weddings is implemented and run to a high standard.
- To generate new business opportunities and to contribute to the development and growth of the charity.
- To undertake any other duties commensurate with the post's level of responsibility.
