About Coyo Taco

Coyo Taco started as a little taco shop in Wynwood, Miami in 2014 and is now a global brand with sites across the US, Portugal, Paris, Panama and the Dominican Republic. London is next.

Our motto is simple: todo es fresco — everything fresh. Tortillas hand-pressed daily. Guacamole smashed to order. Proteins responsibly sourced. We do modern Mexican street food properly, in a place that's loud, friendly and fast — with a late-night bar tucked away once the kitchen winds down.

This summer we open our first UK site in central London. We're putting the team together now — and we want energy, hands-on attitude and people who genuinely love hospitality.

The role As a Restaurant Supervisor you'll be one of our opening team leaders — running the floor on shift, looking after front of house Team Members and back of house, and making sure every guest gets the Coyo experience: fresh, fast, friendly. You'll set the tone on the floor, the cleanliness of the restaurant, the speed of the service and the energy of your team.

Full time - Mon–Sun rota, up to 45 hours per week, mix of lunch / dinner / late-night shifts

Part time - Mon–Sun rota, up to 20 hours per week, mix of lunch / dinner / late-night shifts

What you'll do

Run the restaurant across lunch, dinner and late-night service
Open and close — set up the floor, run shift briefings, cash up
Be the allergens and food-safety eyes on the floor — every shift, every order
Coach Team Members in real time so they finish each shift better than they started it
Spot guest issues before they become guest issues — and fix them on the spot
Keep your section spotlessly clean and reset between covers
Hit our service standards on speed, smile and table turnaround

What you'll bring

1+ year as a supervisor, team leader or strong server in a fast-paced restaurant
Calm under pressure — Saturday night service is your happy place
Confident with allergens, food safety and challenging conversations with guests
A genuine love of hospitality, a hands-on attitude and a sense of fun
