Job Title: Chef De Partie
Responsible To: Head Chef/Second Chef/Management
Purpose of job:
To prepare and present meals to the standard of the outlet, to the agreed cost levels, with emphasis on presentation, hygiene and economy.
Main Duties:
Ensure that all food items are prepared, cooked and presented as outlined in the menu specifications.
Requisition supplies with the correct authorisation, ensuring effective rotation of food items.
Ensure correct storage of food items both in and out of refrigerators in accordance with health and hygiene regulations.
Ensure equipment, utensils, work surfaces and refrigerators are always kept to a high standard of cleanliness.
Be knowledgeable and comply with health, safety, hygiene, fire and security regulations and procedures of The Horatio Group. and to ensure that all others are aware of their responsibilities in this regard.
Ensure safe and careful handling of equipment and to keep breakage to an absolute minimum.
Be vigilant and ensure no pilferage of any stocks or property of The Horatio Group
Assist in training of junior chefs, ensuring they report for duty on time in the correct uniform and to exceptional standards of personal hygiene.
Work in the kitchen unsupervised as and when required.
Ensure profitability for The Horatio Group, through economic use of food, efficient rotation of stock and energy conservation.
Report all complaints, breakages, accidents, repairs and equipment faults to the Head Chef.
Occasional Duties:
To attend training courses as required.
To perform any duties as requested by Head Chef/Second Chef and management.
PERSON SPECIFICATION
Qualification: Essential
NVQ level 2 or equivalent in a related discipline
Desirable
A current and valid Basic Food Hygiene certificate or equivalent
Experience:
Essential
2 years experience at Commis Chef level or above
Or
3 years experience at Commis Chef level or above and a willingness to work towards NVQ level 2 in a related discipline
Desirable
1 years experience in a similar outlet
