The Catering Butchery Manager is responsible for overseeing the butchery operations within a catering environment. This includes managing staff, ensuring the quality of meat products, maintaining compliance with health and safety standards, and collaborating with chefs and catering teams to meet customer needs.

Key Responsibilities:
- Management and Supervision:
- Lead and manage the butchery team, including recruitment, training, and performance management.
- Schedule and assign tasks to team members based on operational requirements.
- Meat Preparation and Quality Control:
- Oversee the butchering process, ensuring high standards of meat preparation, cutting, and presentation.
- Conduct regular quality checks on meat products to ensure freshness and compliance with company standards.
- Inventory Management:
- Monitor stock levels of meat and butchery supplies, ensuring appropriate inventory levels for catering events.
- Coordinate with suppliers for the procurement of high-quality meat products, negotiating prices and delivery terms.
- Health and Safety Compliance:
- Ensure all butchery operations comply with health and safety regulations, including training staff on food safety practices and sanitation.
- Maintain accurate records of meat sourcing, processing, and waste management in adherence to relevant regulations.
- Collaboration:
- Work closely with the day shift and catering managers to plan orders and stock ordering and ensure that meat preparation aligns with customer requirements and event specifications.
- Provide expertise in meat selection and preparation.
Skills and Qualifications:
- Experience:
- Previous experience working as a butcher or in a similar role in a catering or food service environment.
- Proven experience in managing a team and overseeing butchery operations.
- Knowledge:
- In-depth knowledge of meat cuts, preparation techniques, and food safety regulations.
- Familiarity with inventory management and supplier negotiation.
- Skills:
- Excellent management and communication skills.
- Strong organizational and time-management abilities.
- Ability to work effectively under pressure in a fast-paced catering environment.
- Education:
- Relevant qualifications in butchery, culinary arts, or food safety (e.g., HACCP certification).
Pay: £40,000.00-£45,000.00 per year
