Char & Barrel Ltd is looking for experienced and commercially minded Restaurant General Managers to take responsibility for the day-to-day operation and performance of our current Hatfield restaurant and our upcoming St Albans location.
We are looking for strong, organised and hands-on leaders who can ensure every area of the restaurant works together effectively. From the kitchen and bar to front of house, service and management, you will be responsible for ensuring tasks are completed, standards are maintained and every team member is properly trained and understands what is expected of them.
You will have overall accountability for your restaurant's performance, people, profitability and guest experience, reporting directly to the Area Manager.

Key Responsibilities: Restaurant Operations
- Take full ownership of the day-to-day operation and performance of your designated restaurant.
- Ensure all areas of the restaurant operate efficiently and consistently to company standards.
- Oversee the management team and ensure responsibilities and operational tasks are completed properly and on time.
- Ensure front of house, bar and kitchen teams communicate effectively and work together to deliver smooth service.
- Identify operational problems and take ownership of implementing and following through on solutions.
- Ensure the restaurant remains organised, well maintained and fully prepared for service.
Service & Standards
- Ensure every service operates smoothly and consistently to the expected standard.
- Ensure food is prepared, presented and served correctly and consistently.
- Ensure drinks and cocktails are prepared according to approved recipes and presentation standards.
- Ensure front-of-house service meets company expectations throughout the guest journey.
- Monitor standards during service and take action when they fall below expectations.
- Ensure guest feedback and complaints are handled professionally and appropriately.
Team Management & Training
- Lead and manage the restaurant's management team and wider workforce.
- Ensure every employee receives appropriate onboarding, training and ongoing development.
- Establish clear responsibilities and standards so employees understand exactly what is expected of them.
- Ensure managers are effectively training, supervising and developing their own teams.
- Identify training gaps and implement appropriate training and improvement plans.
- Recognise strong performance and address underperformance constructively and consistently.
- Build a dependable team capable of maintaining standards even when the General Manager is not physically present.
Commercial Performance
- Take responsibility for the restaurant's overall commercial performance and profitability.
- Monitor sales, labour costs, food and beverage costs, stock and wastage.
- Ensure staffing levels and rotas are appropriate for trading levels while maintaining service standards.
- Identify opportunities to improve efficiency, control costs and increase revenue.
- Review performance information and take action where results fall below expectations.
- Report restaurant performance, challenges and required actions to the Area Manager.
Compliance
- Ensure food safety, health and safety, licensing and other regulatory requirements are consistently maintained.
- Ensure managers and team members understand and follow company policies and procedures.
- Maintain appropriate operational and compliance records.
- Identify risks and ensure corrective actions are completed promptly.
