The Concept
Tucked just off the Royal Mile, Mile Yard and POCCA sit at the heart of StayHush (Crichton House).
We’re close enough to feel the city’s buzz, but tucked away enough to breathe. Breakfast coffees turn into lunch catch-ups, lunch rolls into early dinner, and before you know it, it’s the spot people didn’t mean to stay so long in.
This isn’t hotel F&B on the side. It’s part of the Stay Hush experience — where apartment guests and locals mix naturally.
We’re looking for a Floor Manager to support the Venue Manager in building that energy from day one.
The Role
You’ll be the right hand to the Venue Manager — leading shifts, supporting the team, protecting standards and keeping service sharp without losing the relaxed, welcoming feel.
You’re hands-on. You prep food. You run plates. You jump on the bar. You lead from the front.
You’ll report directly to the Venue Manager and play a key role in delivering both the guest experience and commercial performance of the venue.
What You’ll Be Doing
Shift Leadership
- Lead breakfast, lunch and dinner shifts confidently
- Brief the team with clarity and good energy
- Keep service flowing smoothly across bar, floor and kitchen prep
- Support training and development of team members
- Step up in the Venue Manager’s absence
Operations
- Support day-to-day operations across both Mile Yard and POCCA
- Prepare and serve our Focaccia pocket concept alongside the team
- Maintain food quality, consistency and presentation standards
- Ensure compliance with food safety, licensing and H&S requirements
- Support rota management, stock control and wastage monitoring
- Assist with room service delivery to Stay Hush apartments, ensuring quality from kitchen to door
- Greet and guide apartment guests into the F&B space, helping them feel connected and welcome
Guest Experience
- Create a warm, human service style — not scripted, not stiff
- Recognise returning locals and in-house guests
- Handle guest feedback confidently and professionally
- Encourage a relaxed atmosphere where people feel comfortable staying longer
- Help bridge the aparthotel and F&B experience naturally
Commercial Support
- Support the Venue Manager in achieving revenue targets
- Promote F&B packages, upsells and in-apartment dining offers to apartment guests
- Help drive visibility of events and themed nights
- Contribute ideas to activate quieter trading periods
- Support delivery of events, collaborations and community moments
Community & Energy
- Play an active role in events, pop-ups and partnerships
- Help create a space that feels like a neighbourhood hub
- Represent the brand positively within the local area
What We’re Looking For
- Experience as a Supervisor or Assistant Manager in a busy bar or restaurant
- Confident running shifts independently
- Comfortable being hands-on with food prep and service
- Strong organisational and communication skills
- Good understanding of service standards and compliance
And personally:
- Positive and grounded
- Naturally hospitable
- Calm under pressure
- Someone who genuinely cares about the details
- Someone who wants to help build something, not just maintain it
This is a role for someone who enjoys being in the middle of it — the music on, service flowing, guests relaxed, team working well together.
If you want to help shape a place that feels properly local while sitting right in the heart of Edinburgh, we’d love to hear from you.
