Duty Manager – Edinburgh Street Food
Edinburgh Street Food is looking for an experienced and motivated Duty Manager with a background in high-volume hospitality who thrives in a fast-paced environment and is passionate about delivering exceptional guest experiences.
As a Duty Manager, you'll play a key role in the day-to-day operation of one of Edinburgh's busiest hospitality venues, helping to deliver outstanding service to up to 800 guests at any one time. You'll lead by example, supporting both our floor and bar teams to deliver exceptional service while creating an energetic, welcoming and memorable experience for every guest.
We're looking for someone who is commercially aware, highly organised and enjoys being at the heart of a busy operation. You'll work closely with the General Manager and Assistant General Manager to maintain exceptional standards, develop your team, and continually improve our guest experience.

What's in a Day?
The Duty Manager is one of the most important operational roles within Edinburgh Street Food.
Working closely with the General Manager, Assistant General Manager and wider leadership team, you'll oversee the daily operation of one of Scotland's busiest food halls. You'll be responsible for ensuring every shift runs smoothly, leading both the floor and bar teams while maintaining exceptional standards of service, cleanliness and operational excellence.
You'll spend your time supporting your teams, solving problems before they become issues, developing people and ensuring every guest receives the best possible experience.

What You'll Be Doing
· Leading and motivating both the front-of-house and bar teams throughout service.
· Delivering exceptional guest experiences and resolving guest enquiries professionally.
· Supporting supervisors and team members during busy trading periods.
· Ensuring opening, closing and shift handovers are completed to company standards.
· Maintaining high standards of cleanliness, presentation and organisation throughout the venue.
· Coaching and developing team members through regular feedback and training.
· Supporting recruitment, onboarding and development of new staff.
· Working closely with senior management to continually improve operational standards.
· Ensuring company policies and procedures are consistently followed.
· Leading by example and creating a positive, energetic working environment.
Team Leadership
· Lead shifts with confidence and professionalism.
· Delegate responsibilities effectively throughout service.
· Deliver engaging pre-shift briefings and structured handovers.
· Coach, mentor and develop team members.
· Support recruitment and onboarding of new staff.
· Drive accountability while maintaining a positive team culture.
· Support performance management alongside the senior leadership team.
Guest Experience
· Deliver a best-in-class guest experience.
· Manage guest feedback positively and professionally.
· Support the team to resolve issues quickly and confidently.
· Monitor service standards throughout every shift.
· Create memorable experiences that encourage repeat visits.
Bar Operations & Commercial Performance
· Lead and support the bar team throughout service.
· Coach bartenders to confidently upsell premium drinks, signature cocktails and seasonal specials.
· Drive beverage revenue through excellent product knowledge and guest engagement.
· Monitor bar performance throughout service and identify opportunities to increase average spend.
· Assist with stock ordering and inventory management.
· Complete and support regular stock takes.
· Monitor stock control and reduce wastage.
· Ensure bars remain clean, organised and fully stocked throughout service.
· Maintain licensing compliance and ensure Challenge 25 procedures are always followed.
· Work with the management team to develop new drinks offers, promotions and seasonal menus.
Operational Excellence
· Maintain exceptional presentation across guest-facing and back-of-house areas.
· Support daily operational planning.
· Ensure all opening and closing procedures are completed correctly.
· Work collaboratively with independent food vendors to maintain smooth operations.
· Identify opportunities to improve systems and service delivery.
· Lead the team through busy trading periods with confidence and professionalism.
Financial Responsibility
· Support the delivery of sales, labour and profitability targets.
· Drive beverage revenue through effective leadership and upselling.
· Follow company cash handling procedures.
· Assist with stock ordering and inventory management.
· Support monthly stock takes and investigate stock variances.
· Minimise wastage and protect gross profit.
· Identify opportunities to increase guest spend without compromising the guest experience.
Health & Safety
· Ensure all Health & Safety procedures are followed.
· Maintain licensing compliance at all times.
· Support food safety and hygiene standards across the venue.
· Ensure fire safety procedures are understood and followed.
· Report maintenance issues promptly.
· Promote a safe and compliant working environment.
· Lead by example in all aspects of compliance.
What We're Looking For
· Previous supervisory or management experience in a busy hospitality environment.
· Experience managing high-volume bars and front-of-house operations.
· Strong communication and people management skills.
· Commercial awareness and the ability to drive sales.
· Experience with stock control and ordering.

Hours
Our Duty Managers work an average of 40 hours per week across a flexible rota including evenings, weekends and public holidays. The venue typically operates between 09:00am and 1:00am, with extended trading during festivals, major events and seasonal periods.

Pay: £28,000.00-£32,000.00 per year
