We are looking for an enthusiastic and experienced Assistant General Manager to join our growing Ichimaru Udon team. This is an exciting opportunity for an ambitious hospitality professional looking to develop their leadership career within a fast-paced, high-volume restaurant environment.
The Role
As Assistant General Manager, you will support the General Manager in the day-to-day running of the restaurant, ensuring outstanding customer service, operational excellence and strong commercial performance.
You will lead by example, support and develop the restaurant team, oversee daily operations and take responsibility for the site in the General Manager's absence. Working closely with the Head Chef and Supervisors, you will help deliver exceptional food quality, efficient service and an outstanding guest experience.
Key Responsibilities
- Support the General Manager in the day-to-day operation of the restaurant.
- Lead, motivate and develop Supervisors and Team Members to achieve Company standards.
- Take responsibility for the restaurant during assigned shifts and when deputising for the General Manager.
- Deliver exceptional customer service and resolve customer concerns professionally.
- Support recruitment, onboarding, training and performance management.
- Ensure efficient labour deployment and smooth Front of House and Back of House operations.
- Monitor food quality, cleanliness, hygiene and brand standards.
- Support stock ordering, stock control and waste management.
- Assist in achieving sales, labour and profitability targets.
- Ensure compliance with food safety, allergen management, health & safety and Company procedures.
- Support audits, compliance inspections and continuous operational improvements.
About You
- Previous experience as an Assistant Manager, Deputy Manager or similar management role within a fast-paced hospitality or quick-service restaurant environment.
- A confident leader who enjoys developing and motivating teams.
- Excellent communication and organisational skills.
- Strong understanding of customer service and operational excellence.
- Commercial awareness with experience managing labour, stock and costs.
- Good knowledge of food safety, health & safety and hospitality compliance.
- Ability to remain calm under pressure and make sound operational decisions.
- Flexible to work evenings, weekends and public holidays as required.
- Experience within a Japanese or Asian restaurant environment would be advantageous but is not essential.
