Opening soon in the historic "The Horns" building in Ashbourne, we specialize in the craft of the 90-second Neapolitan pizza, utilising a meticulous 24-hour fermentation process. Our mission is to bring the soul of Naples to the heart of Derbyshire, operating out of a high-end, open-theatre kitchen.
As we launch our first location, we are looking for a visionary Head Pizza Chef to lead our kitchen operations and help us scale the Napolino brand across future locations.
The Role
We are seeking an experienced, passionate, and disciplined Head Pizza Chef. You will be the heart of our kitchen, responsible for maintaining the highest standards of dough-craft and service while managing a fast-paced, high-volume environment.
Key Responsibilities:
- Dough Mastery: Oversee the daily 24-hour fermentation process to ensure our signature "Napolino" dough is consistent, light, and perfect every time.
- Service Leadership: Learn and lead the "theatre" of the kitchen, stretching, topping, and firing pizzas in under 90 seconds during peak periods.
- Team Management: Train, and inspire a kitchen team that shares our obsession with quality and speed.
Who You Are
- Experienced: You have a proven track record as a Head Chef or Senior Sous Chef in a high-volume, authentic Neapolitan pizzeria.
- Technical: You have a deep understanding of Neapolitan electric/gas/wood-fired ovens and the science of long-fermentation dough.
- Ambitious: You aren't just looking for a job; you want to be part of a growing brand with plans for multi-location expansion.
- A Performer: You enjoy the "theatre" of an open kitchen and can maintain a calm, professional, and engaging presence in front of customers.
