Must-Have Requirements
- High-Volume Experience: Proven Head or Senior Sous Chef background managing fresh food operations (comfortably handling 300+ Sunday covers).
- Financial Control: Strong track record in managing stock, food costs, and GP targets.
- Compliance: Expert knowledge of food safety, hygiene, and health & safety regulations.
- Leadership: Hands-on ability to inspire, train, and lead a busy kitchen team.
Vibe: Traditional British food, complimented with occasional other cuisines throughout the menu, fresh local ingredients. A number of set menu evenings throughout the year where the kitchen can demonstrate its flare and creativity. Busy weekends with 300 covers on a busy Sunday.
What you’ll be doing
- Dream up high quality seasonal menus and fun daily specials, using the best local produce we can get our hands on
- Cook everything from scratch – no shortcuts, just proper fresh food
- Keep standards tip-top for our regulars and visitors alike, while powering through our huge Sunday roast service
- Run the loyal, hard working kitchen teaming in a friendly manner but keep things tight – plan prep, manage stock, keep waste low and hit our targets
- Make sure we stick to all food safety rules, and keep our classic dishes tasting just as they should
What you need
- Solid experience as Head Chef in a busy pub or restaurant, especially handling larger service volumes
- Love for traditional British cooking, seasonal food and sourcing from local suppliers
- Cool as a cucumber when it’s heaving on a Sunday
- Happy to work weekends, Sundays and bank holidays
- Proper food hygiene knowledge (Level 3 or willing to get it)
Pay: £40,000.00-£50,000.00 per year
