We’re now looking for a Butchery Manager to take ownership of one of the most important parts of the operation.
The Role
This is not a traditional butcher role.
You will be responsible for running the butchery function end-to-end, covering both:
1. Poultry Cutting (Production)
- Output (birds per hour)
- Yield
- Efficiency
- Consistency
2. Traditional Butchery & Value-Add
- Whole carcass butchery of lamb and pork
- Sausages, burgers and marinaded products
- Knowledge of curing desirable
- Supporting value-add production (pies, broths etc.)
You’ll be balancing pace and performance with quality and craftsmanship.Comfortable switching between, and managing teams working simultaneously on production line chicken cutting & and craft butchery and value added retail production.You’ll also be expected to support the wider production flow, including abattoir operations.
What You’ll Be Responsible For
- Delivering daily cutting and production targets
- Maximising carcass yield and reducing wast
- Maintaining product quality, accuracy and presentation
- Ensuring full hygiene, traceability and food safety compliance
- Running a clean, organised and efficient butchery & abattoir
- The role moves between butchery, cutting and abattoir
Leading & Developing the Team
A key part of this role is developing people.
You will:
- Train and improve knife skills and consistency
- Build capability across the team
- Identify and develop strong performers
- Maintain standards through hands-on leadership and coaching
This is a hands-on leadership role, not an office job
Working Within the Business
You will:
- Report to the Production Manager
- Work closely with Kitchen, Packing and Dispatch
- Play a key role in improving performance and product quality across the business
You own the butchery — and support the wider production flow
What We’re Looking For
We are looking for someone who:
- Has strong butchery experience (poultry and/or red meat)
- Understands yield, efficiency and production environments
- Is comfortable working at pace and leading from the front
- Can train and develop a mixed-skill team
- Takes ownership and solves problems
