Edinburgh Butchers is a growing independent butcher and food retailer operating four trading retail counters across Edinburgh under the Charles Wilson and James Anderson trading names, with an established online presence serving customers across the city. THE ROLE
We are looking for two time-served, fully qualified butchers to join our teams — one at Charles Wilson Corstorphine and one at James Anderson Leith. These are full-time, permanent roles for people who know their trade inside out — from boning out to counter presentation — and who take genuine pride in delivering a top-quality product and service every day.
These are significant appointments for us. The right candidates will be given the opportunity to make the roles their own and, in time, to take on greater responsibility within the business.
WHAT YOU WILL BE DOING
- Boning out forequarters and hindquarters of beef and other primal cuts to a high standard
- Full counter operation — preparation, presentation, portioning and customer service
- Stock rotation and chiller management, ensuring full compliance with food safety and temperature control requirements
- Ordering and stock control in line with store requirements
- Sausage and value-added product preparation
- Maintaining the highest standards of hygiene, cleanliness and food safety at all times
- Contributing to counter and window display presentation
- Supporting the wider store team as required
WHAT WE NEED FROM YOU
- Time-served, fully qualified butcher
- Proven experience of boning out beef — forequarters and hindquarters
- Confident and experienced in running a busy retail butchery counter
- Solid understanding of stock rotation, chiller management and food safety compliance
- A high standard of knife skills and product knowledge across all species
- Customer-focused with a professional and friendly manner
- Reliable, punctual and committed — someone we can count on
WHAT WE OFFER
- Salary of £28,640–£33,270 per annum depending on experience
- Full-time permanent role — 42.5 hours per week
