Sous Pastry Chef – 5 Hertford Street Club

Our London portfolio includes 5 Hertford Street, Oswald’s, and Birley Bakery and Chocolate Shop in Chelsea. In 2025, we expanded internationally with the opening of Maxime’s, alongside a new Birley Bakery in New York City.
We are looking for a talented and detail-oriented Sous Pastry Chef to join our luxury private members’ club, supporting the operations of our three pastry kitchens.
This is an exciting opportunity for a pastry professional who excels in a fast-paced, high-volume environment and is passionate about delivering exceptional quality.

Working hours:
- 48 hours a week with shift starts from either 11:30am/3:30pm
- Sunday off
What you will do:
- Oversee the day-to-day operation of the pastry kitchen, ensuring exceptional quality, presentation, and service standards.
- Support menu development, seasonal creations, and innovative dessert offerings alongside the Head Pastry Chef.
- Manage stock, ordering, production planning, and cost control to ensure efficient kitchen operations.
- Lead, train, and develop the pastry team while maintaining the highest standards of hygiene, health & safety, and compliance.
What are we looking for?
- Previous experience in a similar pastry role within a hospitality environment
- Strong pastry knowledge and passion for quality food production
- Self-motivated, organised, and able to work on own initiative
- A collaborative team player with the ability to follow direction and support operational excellence
