Following a devastating fire and a circa £1 million refurbishment, Marr Lodge has recently reopened and is once again welcoming guests. As a busy, high-volume carvery site, we are now looking for an experienced and driven Head Chef to lead our kitchen team and take ownership of food quality, standards, and performance.
This is a hands-on leadership role within a fast-paced environment, where our customers expect consistent, high-quality food, strong service times, and excellent standards every day — particularly during peak trading periods.
As Head Chef, you will be responsible for the overall management of the kitchen, leading by example, developing your team, and ensuring the kitchen operates efficiently, safely, and profitably.
Key Responsibilities
- Lead, manage, and motivate the kitchen team to consistently deliver food to a high standard and company specification
- Take full ownership of the carvery operation, ensuring quality, presentation, portion control, and service times meet expectations
- Plan menus, contribute to specials and events, and drive food innovation while maintaining brand consistency
- Manage stock control, ordering, GP, and wastage in line with company policies and targets
- Ensure all food is prepared, cooked, and served in line with site standards and legal requirements
- Oversee food hygiene, due diligence, and compliance with Food Safety and Health & Safety at Work Act 1974
- Ensure all food hygiene documentation and due diligence paperwork is completed accurately and on time
- Maintain high standards of cleanliness, organisation, and maintenance across all kitchen areas
- Recruit, train, develop, and support kitchen team members, building a strong and positive team culture
- Ensure all kitchen policies, procedures, standards, and guidelines are followed at all times
- Communicate effectively with the management team to support the wider business objectives
- Lead by example with personal hygiene, grooming, professionalism, and work ethic
What We’re Looking For
- Proven experience as a Head Chef or Senior Sous Chef in a high-volume or carvery-led environment
- Strong leadership skills with the ability to train, motivate, and develop a team
- Excellent organisational and time-management skills
- Strong knowledge of food safety, hygiene, and due diligence systems
- Commercial awareness with experience managing stock, costs, and margins
- Calm and decisive under pressure, especially during busy service periods
- Passion for delivering high-quality, consistent food
