St Mellons Golf Club is seeking a strong, organised and commercially aware Head Chef / Kitchen Manager to lead and develop the kitchen operation.
This is a key appointment for the club. The primary focus of the role is delivering a consistent, reliable and high-quality food offer for members on a day-to-day basis. Members are at the heart of the club, and the kitchen must support that by providing food that is well organised, good quality, and available when expected. Consistency, pace and standards in daily service are non-negotiable.
Alongside this core responsibility, the role also leads food delivery across societies, events, private functions and weddings. These are important to the club’s reputation and revenue, and the successful candidate will be expected to plan and deliver them with structure, control and confidence.
This is a hands-on leadership role. It requires someone who can bring structure, improve standards, organise the kitchen properly and build a team that can deliver consistently across both everyday service and larger occasions.
The role also offers genuine scope for creativity. We are looking for someone who can help shape the food offer, develop menus that work for members and events, and bring fresh ideas that are practical, commercially sound and suited to a golf club environment.
We would welcome applications from experienced Head Chefs, Kitchen Managers, or strong Sous Chefs who are ready to take the next step into a Head Chef / Kitchen Manager role.
A good work-life balance is important to us. This role will not require the successful candidate to work every weekend or every evening. While some weekend and evening work will naturally be required due to the nature of events and hospitality, the club is committed to planning working patterns sensibly and creating a role that is structured, sustainable and attractive for the right person.
Key Responsibilities
Leading the day-to-day kitchen operation with a clear focus on member service
Delivering consistent, timely and reliable food for members on a daily basis
Maintaining a food offer that is appropriate, efficient and commercially sound
Creating and developing menus for daily service, societies, events, functions and weddings
Taking ownership of food delivery for events, functions and weddings
Planning menus, prep, staffing and service flow for larger bookings
Managing ordering, stock control, waste and gross profit
Maintaining high standards of cleanliness, food safety and compliance
Organising prep and kitchen systems to ensure smooth service
Recruiting, training and developing kitchen staff
Working closely with the Clubhouse Manager and wider team
Events and Functions
Events are an important part of the role, but they must sit alongside a strong and consistent daily operation.
The successful candidate will be responsible for delivering food for golf days, societies, club events, private functions and weddings. This requires clear planning, strong organisation and calm leadership during service.
The right person will understand how to balance quality with efficiency, ensuring events are delivered professionally without impacting the day-to-day member experience.

Has strong kitchen leadership experience or is an experienced Sous Chef ready to step up
Understands that member day-to-day service is the priority
Can organise people, systems and standards effectively
Has experience delivering daily service and ideally larger events or functions
Understands food cost control and kitchen performance
Can work at pace while staying calm and structured
Is hands-on, reliable and solutions-focused
Leads from the front and builds respect within the team
Takes pride in delivering consistent, good-quality food
Can bring creativity and fresh ideas while still understanding the commercial needs of the club
Wants a role with responsibility, influence and a good work-life balance
