Cubley Hall is a busy country pub, hotel, wedding venue and events destination located on the edge of the Peak District. We pride ourselves on serving high-quality, freshly prepared food across our restaurant, bar, weddings, conferences and private functions.
We are looking for an experienced, passionate and reliable Senior Sous Chef to become the Head Chef's right-hand person. This is a key leadership role within our kitchen, providing day-to-day support to the Head Chef while helping to lead, develop and motivate the kitchen team.
The successful candidate will be capable of taking full responsibility for the kitchen in the Head Chef's absence, ensuring the highest standards of food quality, consistency, cleanliness, organisation and food safety are maintained at all times. This role requires someone who thrives in a fast-paced environment, can lead by example, and is committed to delivering exceptional food whether serving two guests in the restaurant or catering for a 150-guest wedding.
Working closely with the Head Chef, you will help drive standards, develop seasonal menus and specials, support stock control and cost management, train junior chefs, and play a major part in maintaining the excellent reputation of Cubley Hall.
Key Responsibilities
- Act as the Head Chef's deputy, confidently managing all kitchen operations during their absence.
- Support the Head Chef in delivering consistently high food standards across the restaurant, bar, weddings, functions and hotel.
- Lead, motivate and supervise the kitchen brigade, creating a positive, professional and supportive working environment.
- Ensure all food is prepared, cooked and presented to the highest standard whilst maintaining consistency across every service.
- Assist with menu planning, seasonal specials and new dish development using fresh, locally sourced ingredients wherever possible.
- Ensure all Environmental Health, HACCP and food safety procedures are followed and maintained to the highest standard.
- Carry out and monitor food safety records, temperature checks, allergen controls and kitchen compliance documentation.
- Assist with stock ordering, stock rotation, inventory control and minimising food waste to achieve GP targets.
- Maintain excellent organisation during busy service periods, ensuring effective communication between all kitchen sections.
- Support the planning and execution of weddings, large events and private functions, ensuring every event is delivered to an exceptional standard.
- Train, coach and develop junior chefs and kitchen assistants, encouraging continuous improvement and professional development.
- Work closely with front-of-house management to ensure excellent communication and guest satisfaction.
- Maintain the highest standards of cleanliness, equipment care and kitchen presentation.
- Be proactive in identifying improvements to kitchen procedures, service efficiency and food quality.
Skills & Experience
The ideal candidate will have:
- Previous experience as a Sous Chef or Senior Sous Chef within a quality pub, hotel or restaurant.
- The confidence and ability to run a busy kitchen independently when required.
- Strong leadership skills with experience supervising and developing kitchen teams.
- Excellent knowledge of fresh food preparation and modern cooking techniques.
- Experience delivering high-volume service whilst maintaining exceptional quality.
- A thorough understanding of HACCP, food hygiene legislation and allergen management.
- Excellent organisational and time management skills with the ability to remain calm under pressure.
- Experience with stock control, ordering, food cost management and waste reduction.
- A positive, hands-on attitude with a willingness to support every section of the kitchen.
- Strong communication skills and the ability to work collaboratively with both kitchen and front-of-house teams.
- A genuine passion for hospitality and delivering memorable dining experiences for every guest.
