Dune is looking for an experienced and motivated Assistant Manager to join our management team. We're seeking a hospitality professional with a passion for exceptional service, excellent drinks knowledge, and the confidence to lead from the front.
This is a hands-on role that requires someone who is equally comfortable managing a busy service, creating outstanding cocktails, recommending wines, and supporting the wider team to deliver an exceptional guest experience.
The Role
Working alongside the General Manager, you'll help oversee the day-to-day operation of the restaurant and bar, ensuring high standards are maintained across every aspect of the business. You'll lead by example, inspire the team, and play a key role in delivering memorable experiences for every guest.
Key Responsibilities
- Supporting the day-to-day management of the restaurant and bar.
- Leading shifts and ensuring smooth service from start to finish.
- Preparing and serving high-quality cocktails and premium beverages.
- Providing knowledgeable wine recommendations and supporting food and wine pairings.
- Training, mentoring, and motivating the team.
- Maintaining excellent service standards and attention to detail.
- Managing stock, cash handling, and opening and closing procedures.
- Ensuring compliance with licensing, health and safety, and food hygiene regulations.
- Building strong relationships with guests and handling feedback professionally.
About You
We're looking for someone who:
- Has previous experience in an Assistant Manager or senior supervisory role within hospitality.
- Is fully bar and cocktail trained with strong technical knowledge.
- Has a good understanding of wines and is confident making recommendations to guests.
- Can confidently manage shifts independently while also working collaboratively as part of a management team.
- Leads by example with a positive attitude and strong communication skills.
- Thrives in a fast-paced, high-quality hospitality environment.
- Is organised, reliable, and committed to delivering exceptional customer service.
