About the Role
Following a massive, top-to-bottom kitchen and front-of-house refurbishment, Sushea is expanding. These major upgrades mean we are moving away from seasonal gaps and will now remain open throughout the year. Because of this growth, we are looking for a powerhouse Restaurant Manager to work directly alongside the leadership team to drive our operations forward.
This is a fast-paced, hands-on role that requires a sharp operational mind, exceptional stamina, and a total lack of ego. We are not looking for a clipboard manager. We need an experienced leader who can command a fast-moving shift, manage restaurant logistics under pressure, and maintain our reputation for premium quality, inclusive food, and immaculate customer service.
Key Responsibilities
- Operational Logistics: Oversee daily front-of-house and comunicate and support back-of-house flow, ensuring smooth transitions between high-volume prep and fast-paced service times.
- Off-Season Strategy: Assist in organizing, promoting, and executing exciting new winter initiatives including specialty nights, curated tasting events, and premium "all-you-can-eat" concepts to keep the vibe buzzing year-round.
- Team Leadership: Motivate, organize, and manage the shift team, keeping morale high and standards tight without micro-managing.
- Hands-on Service: Lead by example by getting stuck into all aspects of the business from managing suppliers and customer relations to assisting with food prep and maintaining a pristine environment.
- Compliance & Standards: Strictly enforce food hygiene procedures, health and safety regulations, and overall cleanliness across the newly refitted site.
- Tech-Savvy Management: Confidently utilise and learn digital systems for ordering, stock management, and service operations.
What We Are Looking For
- Proven Hospitality Management Experience: You must have a solid background in managing busy, fast-casual or premium hospitality environments. Please do not apply if you do not meet this requirement.
- Speed and Stamina: The capability to work hard, think fast on your feet, and stay highly organized when the pressure is on.
- Strong Communication & Accountability: A reliable, honest, and trustworthy professional who takes complete ownership of their shifts.
- The Right Attitude: Confident but down-to-earth; humble enough to lead by example and transform a team, not dominate it.
