Casa Brío is coming to Penwortham.
Inspired by Spanish café culture, Mediterranean food and the relaxed way of eating and drinking we love about Spain, we're creating a place built around good food, good wine and Buenos Momentos.
We're looking for an experienced Kitchen Lead to help us build and lead the kitchen from the ground up.
We're looking for someone who enjoys being hands-on, wants to have a genuine say in the food and kitchen operation, and is excited by the opportunity to help shape something from the very beginning.
You'll work closely with experienced owners to develop the kitchen, supported by chefs, with responsibility for making sure the kitchen runs smoothly day to day.
What you'll be doing:
- Taking overall responsibility for the day-to-day running of the kitchen
- Leading and supporting the kitchen team during service
- Working closely with us to develop and refine the Casa Brío menu
- Helping create recipes, prep lists, portion sizes and kitchen systems
- Ensuring food is consistently prepared and presented to a high standard
- Managing stock, ordering and deliveries
- Helping manage rotas and kitchen hours
- Maintaining strong food hygiene, health & safety and cleanliness standards
- Training and developing members of the kitchen team
- Managing the kitchen during both daytime brunch/lunch service and evening tapas service through midweek and weekends.
- Ensuring the kitchen is properly prepared for each service
- Keeping food waste and costs under control
- Taking responsibility for the kitchen when the owners aren't there
- Helping us continually improve how the kitchen operates as Casa Brío grows
What we're looking for:
We're looking for an experienced chef who is ready to take ownership of a kitchen, whether that's through previous experience as a Head Chef, Sous Chef, Senior Sous Chef or another senior kitchen position.
You'll ideally be someone who:
- Has several years' professional kitchen experience
- Has experience leading a kitchen team or running shifts
- Is confident managing a busy service
- Understands stock control, ordering and food costs
- Takes pride in consistency and presentation
- Is organised and understands the importance of good preparation
- Has high standards around food hygiene and cleanliness
- Is confident managing and motivating a small team
- Is comfortable working hands-on alongside the rest of the kitchen
- Enjoys having input rather than simply following someone else's menu
- Is comfortable working across both daytime and evening service
- Is reliable, calm under pressure and a good communicator
Experience with Spanish or Mediterranean food would be a bonus, but it's not essential.
More important to us is finding someone with the right attitude, experience and ambition to help us build something we're proud of.

We're looking for someone who wants to grow with Casa Brío. As the business develops, there's the opportunity for the Kitchen Lead role to grow into a position with greater responsibility for the kitchen by owning the entire food operation and its strategic development.
