We are looking for an ambitious and creative Head Chef to lead the kitchen at the Pipers' Tryst Restaurant, part of The National Piping Centre in the heart of Glasgow.
This is an opportunity for someone who wants to do more than take over an existing kitchen. We are looking for a Head Chef who wants to make their mark: shaping the food, developing the team and helping us decide what the next chapter of the Pipers' Tryst should look like.
You will join a motivated, forward-thinking leadership team with a genuine appetite for new ideas. We are proud of what we do, but we are not interested in doing something simply because it is how it has always been done. Menus, suppliers, service styles, kitchen systems and ways of working can all be challenged if there is a better way.
For the right person, that means a significant degree of creative and operational autonomy. We want a Head Chef with ideas, judgement and ambition, and we want to give them the space and support to put those qualities to work.
About the Pipers' Tryst
The Pipers' Tryst sits within The National Piping Centre, one of Scotland's leading cultural organisations and an internationally recognised home for Scotland's piping traditions.
The restaurant operates an à la carte service six days a week, alongside a wider food operation which runs seven days a week and includes:
- Breakfast and dining for hotel guests
- Weddings and private functions
- Corporate and cultural events
- Receptions and hospitality
- Performances and special events
- Bespoke catering requirements across The National Piping Centre
It is an unique and varied environment in which to run a kitchen. One day might centre around the restaurant's regular service; another could involve a private dinner, wedding, international guests or one of the many events taking place within the building.
We want our food offering to reflect that opportunity.
As Head Chef, you will have overall responsibility for the kitchen and food operation at the Pipers' Tryst. You will be trusted to lead it.
Working closely with the General Manager and wider leadership team, you will have considerable freedom to develop menus, improve systems, build the kitchen team and influence the future direction of our food and hospitality offer.
We are looking for someone who combines creativity with strong commercial and operational judgement. Great food matters, but so does consistency, margin, organisation, team development and the ability to deliver across a varied seven-day operation.
Key responsibilities
- Lead the day-to-day operation of the Pipers' Tryst kitchen.
- Develop and evolve the restaurant's à la carte menu, with real freedom to introduce new dishes, ideas and approaches.
- Develop menus and food offers for weddings, functions, events, hotel guests and other hospitality activity.
- Take ownership of food quality, presentation and consistency.
- Recruit, lead, motivate and develop the kitchen team.
- Build a positive kitchen culture with high standards and clear expectations.
- Manage kitchen rotas and staffing effectively across the seven-day operation.
- Take responsibility for food purchasing, supplier relationships and stock management.
- Manage food costs, gross profit and wastage while maintaining quality.
- Review existing suppliers, products, processes and working practices and recommend change where it will improve the operation.
- Work collaboratively with the restaurant, hotel, events and wider National Piping Centre teams.
- Ensure excellent standards of food hygiene, allergen management, HACCP and health and safety.
- Maintain an organised, efficient and well-managed kitchen.
- Contribute ideas to the wider commercial development of the Pipers' Tryst and The National Piping Centre's hospitality offer.
We are interested in meeting experienced chefs who are ready to take genuine ownership of a kitchen. You might already be an established Head Chef, or you might be a talented Senior Sous Chef looking for the opportunity and freedom to step up.
More important than having followed a particular career path is having the ability, confidence and ambition to lead.
You should bring:
- Strong professional kitchen experience, ideally within a quality restaurant, hotel or events environment.
- The ability to create and develop excellent, commercially viable menus.
- Strong leadership and people-management skills.
- A sound understanding of food costings, margins, stock control and purchasing.
- Excellent organisational skills and the ability to manage a varied operation.
- High standards of food safety, hygiene and allergen management.
- The confidence to make decisions and take responsibility for them.
- A collaborative approach to working with colleagues across the organisation.
- Curiosity and a willingness to question how things are currently done.
- A genuine desire to build something you can be proud of.
