Meikleour Estate is expanding their Kitchen team for a Senior Chef de Partie for its award-winning boutique hotel The Meikleour Arms (AA 4 Star Gold and 1 Rosette, AA Accommodations the Year Scotland 2022).
The 1 Rosette Franco-Scottish restaurant is a quality gastro pub serving quality “from field to plate” good food using local ingredients from the estate (venison, vegetables, foraged produce) and local farms. The kitchen has its own butchery and game larder (the estate has its own deer stalker). The hotel attracts a varied customer base all year: salmon anglers, golfers, shooting parties, and holidaymakers alike.

Remuneration
- We offer our full-time Senior CDPs a very attractive package for this permanent position with 40h contract remuneration, generous gratuities (tips) and all extra hours paid
- £34,320 per year + £3000 tips (see below) = £37,320/year
- ALL recorded overtime hours are paid at an hourly rate of £18.49 (£16.50/ hour + holiday pay)
- Note about gratuities (tips): We use an HMRC compliant tronc system which ensures all of the hotel and restaurant's tips go to all of the staff. On average, staff can expect £1.50/ hour expected tips which combined is a very attractive package!
Hours of Work
We are looking for a full time candidate: 5 days out of 7 for 40 hours per week. From time to time you may need to work overtime, overtime hours recorded and paid monthly.
Requirements
- Proven experience at CDP level .
- Previous experience in a 4/5 star hotel restaurant will be looked upon favourably.
- A solid level of culinary techniques and principles.
- Our ideal candidate will come from a fresh food background and a key eye for detail.
- Enthusiastic and eager to learn. Ideally, you have an interest in provenance, the countryside, and farming practices.
- You must be fully aware of food safety requirements
- Good knowledge of bread making would be a plus
- Organised, methodical, and a reliable team player who is also polite, punctual, and able to work independently
- You must have your own means of transport as there are no buses early in the morning and we are in a rural area (there is accommodation available, please see below).*
Responsibilities of the Chef de Partie
- You will be responsible for your section, including the breakfast shift, working independently or with another chef and KP.
- You will assist and support Head Chef & Sous-Chefs in the preparation and presentation of all food.
- You will foster a good team spirit with your kitchen colleagues and our other hotel departments.
- You will ensure the best consistency in quality, size, and presentation – be proud of the dishes you produce and always strive to exceed guest expectations.
Notes
- ACCOMMODATION: We offer quality cottage accommodation in Meikleour village if required. Employee have their own bedroom and en-suite, cottage is shared between up to a maximum two employees (shared kitchen, sitting room and garden) . Relocation expenses are not included.
- If travelling, be aware that we are in a rural area with limited public transport. Having your means of transport is deemed essential as buses do not run through Meikleour village regularly, and not at all for the early shifts.
