The Opportunity:
We are seeking an experienced and skilled Sausage Maker to join our wholesale butchery team. This is a hands-on production role at the heart of our business, supplying our retail shops, farm shops, and wholesale customers with traditional, handmade sausages and related products.
The Role:
The successful candidate will be responsible for the preparation, mixing, seasoning, and production of our sausage range, working with traditional recipes as well as bringing ideas for new flavours and seasonal lines. You'll work closely with the wider production team to ensure consistent quality, yield, and presentation across every batch.
Key Responsibilities:
Mix, season, and produce sausages and related products to a consistently high standard, following established recipes and specifications.
Operate and maintain sausage-making equipment (mincers, mixers, fillers, linkers) safely and efficiently.
Monitor stock levels of casings, seasonings, and meat to ensure smooth production runs.
Strictly adhere to HACCP guidelines and food safety standards at all times.
Maintain a clean, organised, and compliant production area.
Support the wider butchery and production team during busy periods.
Contribute ideas for new products, flavours, and seasonal ranges to strengthen our offering.
Qualifications and Attributes:
Proven experience as a sausage maker or in a similar butchery/production role, ideally within a high-end or artisan environment.
Sound knowledge of HACCP and food safety standards.
Strong attention to detail and consistency.
Good physical stamina, comfortable working in a chilled production environment.
A genuine passion for traditional butchery and quality food production.
Ability to work independently and as part of a team.
