Plaquemine Lock is a Michelin Bib gastropub on Regent’s Canal in Angel, Islington – serving up the bold, smoky, soulful flavours of Louisiana. Our menu blends Cajun and Creole classics with British produce, all cooked to a high standard in a relaxed setting often completed with live music. We are a food-focused business owned by Jacob Kenedy (Bocca di Lupo) and have consistently won a Bib Gourmand since 2018. We make as much in house as we can - from bread to sausages to mustard.
We require a sous capable of quickly mastering all sections and running a shift. You must be incredibly food-focused with a passion to use quality ingredients and proper methods. We are particularly looking for someone with knowledge and experience of systems, structure and compliance. This is not a kitchen that takes short cuts, but it's a great position in a close-knit team in a rapidly growing business.
Key Job Responsibilities
- Includes all responsibilities for Commis Chef and Chef de Partie plus the following
- Trains kitchen on management and supervision
- Places orders as per daily needs of the business within agreed timeframe
- Carries out daily delivery checks. Resolves all delivery issues in time for service
- Schedules food preparation duties for the kitchen team
- Resolves all kitchen maintenance issues or reports to the Head Chef for resolution
Requirements
- Food Safety Level 2
- Demonstrates an understanding and awareness of all policies and procedures relating to health and safety, food safety and fire safety
- Experience at a supervisory level in a kitchen producing similar quality and quantity
