KINZ is a new Lebanese brasserie in the heart of Notting Hill, created around generous hospitality, fresh ingredients and the warmth of Lebanese cooking.
Set within a beautifully restored former bank, KINZ brings together thoughtful design, welcoming service and a menu rooted in comfort, flavour and tradition. From breakfast and lunch through to dinner and private events, we want every guest to feel well looked after and every dish to be served with care and consistency.

Role Overview
We are looking for an experienced, organised and hands-on Chef De Partie to support the Head Chef in leading the kitchen team and delivering consistently high standards across all services.
The Sous Chef will play a key role in the day-to-day running of the kitchen, including food preparation, service delivery, team supervision, stock control, hygiene standards, training and menu execution.
You will lead by example, support the development of junior chefs and help maintain a calm, professional and efficient kitchen environment.
Key Responsibilities
1. Kitchen Leadership & Service
Support the Head Chef in the daily running of the kitchen across breakfast, lunch, dinner and events.
Lead kitchen sections during service, ensuring food is prepared and presented to KINZ standards.
Help manage the pace, quality and consistency of dishes during busy services.
Coordinate clearly with the front-of-house, bar and management teams to support smooth service.
Step in to lead the kitchen in the Head Chef’s absence when required.
2. Food Preparation, Quality & Consistency
Oversee mise en place and ensure all sections are fully prepared ahead of service.
Maintain consistency in taste, presentation, portion control and overall food quality.
Ensure all dishes are prepared in line with recipes, specifications and allergen requirements.
Support the Head Chef with menu development, tastings and seasonal updates.
Monitor food standards daily and address any issues quickly and professionally.
3. Team Management & Training
Supervise, support and motivate chefs, commis chefs and kitchen porters.
Assist with training new team members on kitchen procedures, recipes, hygiene standards and service expectations.
Promote a respectful, organised and positive kitchen culture.
Support rota planning and staffing levels in line with service requirements.
Help manage performance, standards and conduct within the kitchen team.
4. Stock, Ordering & Cost Control
Assist with ordering, stock rotation and supplier deliveries.
Monitor food wastage and support the Head Chef in managing food costs.
Ensure accurate storage, labelling and date control across all kitchen areas.
Maintain strong portion control and minimise unnecessary waste.
Support regular stock takes and inventory checks.
5. Health, Safety & Compliance
Ensure full compliance with food safety, HACCP, health and safety, hygiene and allergen regulations.
Maintain a clean, safe and organised kitchen at all times.
Ensure all team members follow correct food handling, storage and cleaning procedures.
Carry out temperature checks, cleaning records and daily compliance paperwork.
Report maintenance, equipment or safety issues promptly.
6. Brand & Menu Support
Help ensure the food offering reflects the KINZ identity, generous, thoughtful and rooted in Lebanese hospitality.
Support menu launches, events, private dining and promotional activity where required.
Work closely with the Head Chef to maintain the quality, consistency and presentation of every dish.
Contribute ideas for improvements to kitchen operations, menu execution and guest experience.
About You
The ideal candidate will have:
Experience as a Sous Chef or strong Junior Sous Chef in a busy restaurant kitchen.
A calm, organised and hands-on approach to service.
Strong knowledge of food safety, hygiene and kitchen compliance.
A passion for fresh ingredients, quality cooking and consistent standards.
Excellent communication skills and the ability to support and motivate a team.
Experience with Lebanese, Middle Eastern or Mediterranean cuisine is beneficial, but not essential.
A positive attitude, strong work ethic and pride in maintaining high standards.
