- The Natural Philosopher: A moody, modern speakeasy concealed behind the MacSmiths repair shop. Known for strong drinks and low lighting, its heart is an ever-evolving, curated list of 20 exceptional whiskies chosen for their character alongside a rotating lineup of guest kegs celebrating craft beer at its best.
Essential Requirements
- Minimum 2 years' experience in a quality cocktail bar.
- Confident knowledge of classic cocktails
- Ability to memorise and consistently recommend 30+ house cocktails across two distinct venues.
- Strong spirits knowledge, particularly whisky, agave, gin, rum and classic liqueurs.
- Excellent speed, organisation and attention to detail during busy service.
- Friendly, professional and engaging with guests.
Performance Expectations
This is a part-time position requiring availability Friday - Sunday.
Product Knowledge
- Learn and maintain knowledge of 30+ house cocktails across both The Absinthe Parlour and The Natural Philosopher.
- Understand the story, ingredients and flavour profile of every cocktail on both menus.
- Develop a strong understanding of absinthe, whisky and other specialist spirits.
- Keep up to date with seasonal menu changes and new products.
Service
- Deliver warm, knowledgeable and memorable guest experiences.
- Tailor recommendations based on guests' tastes.
- Maintain consistent drink quality regardless of service pressure.
- Handle guest complaints confidently and professionally.
Bar Operations
- Complete mise en place to company standards.
- Maintain a clean, organised workstation throughout service.
- Follow all recipes, specifications and stock rotation procedures.
- Minimise waste and report stock shortages promptly.
- Assist with opening, closing and deep cleaning duties.
Teamwork
- Work seamlessly across both venues and adapt to each venue's style of service.
- Support colleagues during busy periods.
- Communicate effectively with floor staff and management.
- Help train newer team members where appropriate.
Sales
- Confidently upsell premium spirits, cocktails and food where appropriate.
- Promote seasonal specials, tasting events and venue experiences.
- Contribute to achieving venue sales targets.
Professional Standards
- Punctual, reliable and well-presented.
- Flexible to work evenings, weekends and events.
- Comply with all licensing, health & safety and food hygiene regulations.
- Represent the Arcane Drinks brand positively both on and off shift.
Pay: £13.25-£14.50 per hour
