Sous Chef — La Tapa Loca, Brighton
La Tapa Loca is looking for a passionate Sous Chef to join our kitchen team. We're a modern Spanish Mediterranean tapas restaurant bringing bold, authentic flavours to Brighton — think small plates designed for sharing, quality seasonal ingredients, and a fast-paced, high-energy service.
We're after: a confident second-in-command who can support the Head Chef in running a tight, efficient kitchen while bringing their own creativity and passion for Spanish and Mediterranean cuisine.
What you'll be doing:
- Supporting the Head Chef in day-to-day kitchen operations, food prep, and service
- Maintaining consistently high standards of food quality, presentation, and taste
- Managing and mentoring junior kitchen staff, leading by example on the pass
- Ensuring full compliance with food hygiene, safety, and allergen standards
- Assisting with stock control, ordering, and minimising waste
- Contributing to menu development, drawing on authentic Spanish and Mediterranean techniques and flavours
- Covering for the Head Chef in their absence
What we're looking for:
- Proven experience as a Sous Chef or strong Chef de Partie ready to step up, ideally in a tapas, Spanish, or Mediterranean kitchen
- Genuine passion for Spanish and Mediterranean cuisine and ingredients
- Strong leadership skills with a calm head under pressure
- A team player who thrives in a fast-paced, high-volume environment
- Solid food safety and hygiene knowledge
