The Role
The head Pastry Chef will be fully responsible for ensuring their department is prepared for service each day. This is a really nice role for a dedicated and hardworking chef who will have the autonomy and opportunity to fulfil their ambitions.
You will be passionate about home-cooked produce and preparing, Fresh bread, desserts, petit fours and Ice creams each day blending traditional desserts with modern techniques and new flavour profiles.
You will ensure that our junior team are working in line with current regulations and legislation. Manage the section you are working on and ensure that all our produce is safe and handled according to our food safety policy. Ensure that the daily diary is completed and that you are having significant input in this area. Understand all elements of our food safety policy and ensure that everyone is working within our agreements. Ours being The Nare food safety policy. Ensure that our environment is safe to work in and report all equipment breakdown and defects. Identify equipment that needs servicing. Chef de parties should have a competent understanding of cooking fresh produce and accurately prepare and deliver food as it is meant to be served in a timely manner. Assist Chef with the ordering of specific provisions for your area. You will also have some input on our menus.
Candidate Criteria
Candidates must have a significant aspiration to working in quality hotels with passion & pride. Whilst at one level this is a traditional business, it is also progressive, and candidates should be able to demonstrate a much more contemporary outlook on life and an ability to adapt to a fast-moving, busy operation.
You will need a solid background and access to your own transport in order for this position to be viable.
