Overview
We are looking for a passionate individual to join our team as a brewer here at Holy Goat in Dundee. This is an exciting opportunity for an experienced brewer to join our brewery producing high-quality mixed fermentation and wood-aged beers alongside a variety of clean styles. We pride ourselves in producing the highest quality beer possible, with a focus on experimentation and the creation of unique beers.
We are ideally looking for someone with at least 3 years production brewing experience. You will report directly to the Head Brewer, ensuring the daily production tasks are completed. You will be hands-on with wort production on our 24HL brewhouse, whilst also handling beer transfers, cellaring, quality control, CIP and packaging. Working to a high standard, making sure correct procedures and processes are followed. Opportunities to develop in the role, including recipe design and further career progression.
Key Responsibilities
Brewing & Cellar Operations
- Wort production and carrying out brewhouse operations on our 24HL brewhouse
- Cellaring operations
- Monitoring beer fermentation and conditioning
- Carrying out CIP operations
- Ensuring beers are within specification for packaging
- Following SOPs for brewhouse processes

Packaging & Quality
- Preparing for and carrying out packaging operations
- Maintaining beer quality to the highest standards
- Carrying out quality control throughout the production process
- Ensuring strict segregation of mixed-fermentation and clean-production equipment
- Maintaining accurate production records using Breww, Excel, etc

Production & Team
- Supporting the Head Brewer with procedural development and optimisation
- Assisting with production planning
- Demonstrating strong problem-solving skills
- Representing the brewery professionally in the workplace and at events

Development
- A commitment to ongoing professional development, keeping up to date with developments in brewing science and industry best practices
- Opportunity to develop in the role, including recipe design and further career progression

Desirable Qualities
- 3 years production brewing experience
- Experience in quality control techniques
- Experience with Breww brewery management software
- Comfortable with manual handling of ingredients and kegs up to 32kg
- Attention to detail, consistency, ownership, communication, organisation, problem-solving and a positive professional attitude
- Experience in mixed fermentation and barrel ageing is desirable but not essential
- Brewing qualifications are desirable but not essential
Pay: £28,000.00-£30,000.00 per year
