Renowned for authentic British hospitality and award-winning service, The Capital has entered an exciting new era with the award of a Michelin Star in February 2026 under the leadership of acclaimed seafood chef Tom Brown, following the success of his celebrated restaurant, Cornerstone. We are now looking for an ambitious and talented Sous Chef to join our Michelin-starred kitchen brigade.
The Role
This is an exceptional opportunity to work closely with Chef Tom Brown, supporting the leadership of a high-performing kitchen focused on precision, creativity, and world-class hospitality. As Sous Chef, you will play a key role in the day-to-day running of the kitchen, maintaining Michelin-star standards while mentoring junior chefs and driving consistency across all services.
About You
- Previous experience in a Michelin-starred or high-end fine dining kitchen
- Strong leadership and organisational skills
- Passion for exceptional produce, particularly seafood
- Calm and focused under pressure
- Excellent attention to detail and commitment to high standards
- Positive attitude with a desire to develop and inspire others
- Flexible to work evenings, weekends, and varying shifts
Key Responsibilities
- Support the Head Chef and Chef Tom Brown in the daily operation of the kitchen
- Assist in leading and motivating the brigade to deliver Michelin-star quality dishes
- Ensure consistency, presentation, and quality across every service
- Maintain high standards of cleanliness, food safety, and kitchen organisation
- Assist with ordering, stock control, and supplier management
- Help develop junior chefs through training and mentorship
- Take responsibility in the absence of the Head Chef
- Ensure all company policies, food hygiene, and health & safety procedures are followed
- Contribute ideas and support ongoing menu development and kitchen improvement
- Maintain a professional appearance and attitude at all times
