HOLM is recruiting a Sous Chef who wants to achieve big things in an award winning restaurant. 42 hours per week.
Holm is a critically acclaimed, award winning restaurant in South Petherton, South Somerset. We serve ingredient-led, seasonal dishes in our stunning restaurant with an open kitchen in this beautiful part of the world. As our business grows, we're looking for a passionate, talented and committed Sous Chef to join our team to help us deliver consistently exceptional food and dining experiences to our guests.
Our ideal candidate will have a proven ability to cook at the highest level (Michelin or equivalent), with experience across all sections, an aptitude for getting the best out of their team and a laser focus on the little details that make the best kitchens run like clockwork. We make our own bread and ferments in house. Buy in whole fish and meat for whole animal butchery. We are developing a kitchen garden to supply part of the produce for the restaurant, including fruits, vegetables and herbs. We invest time into working closely with local farmers and producers to source the best quality ingredients.

Your responsibilities:
The role requires someone who can be a guardian of quality control at all times, helping the Head Chef deliver our menu, to the highest quality standards, running the kitchen in their absence and providing adhoc and formal training to support the wider team.
- Work in all areas of the kitchen depending on your daily needs
- Oversee stock control, ordering and stock rotation
- Prepare and serve all dishes to the highest quality
- Ensure all sections are prepared & ready for service
- Report any maintenance requirements and hazards to Head Chef or GM
- Continually support & guide the Commis, CDPs & KPs with a combination of adhoc guidance & more formal training
- Host informative briefings for the wider team
- Attend food, service, operational meetings as and when required
- Contribute to BoH operational systems
- Assist the Head Chef with dish development & costing
- Minimise food waste and spoilage
- Ensure all opening and closing checklists are completed
- Develop own skills by researching new dishes & presenting ideas to the Head Chef
Your schedule:
- Tuesday - Sunday as standard, with 6 shifts of 7 hours each spread across that time
- Weekend availability is essential (we aim to offer at least two weekend days off a month)
