- Lead the day-to-day operation of two bars at Locke Canary Wharf, owning service standards, atmosphere, and guest experience across both
- Recruit, train, and inspire a high-performing bar team, building a culture rooted in our ethos of "work hard and be kind"
- Design and refine seasonal cocktail and drinks menus that excite guests and protect margins
- Own stock control, ordering, GP management, and supplier relationships across both bars
- Drive bar revenue through smart upselling, events, and a memorable guest offer
- Maintain impeccable standards of cleanliness, licensing, and health and safety compliance
- Manage rotas, labour costs, and scheduling to balance brilliant service with commercial discipline
- Champion the launch, building local awareness and turning first-time visitors into regulars

- Proven experience as a Bar Manager or strong Assistant Bar Manager ready for the step up, ideally in a high-volume or premium setting
- Genuine cocktail and drinks knowledge, with the creativity to build a standout menu
- Confident commercial acumen across GP, stock, labour, and budgeting
- A natural leader who builds, motivates, and retains great teams
- Calm, organised, and unflappable under pressure, with the energy a new opening demands
- Personal Licence holder (or willingness to obtain one)
