As a Kerala Specialty Chef at, Nottinghamshire, you will be responsible for creating and executing an authentic Kerala menu that delights our customers and stays true to the cultural heritage of the region. Your expertise in traditional cooking methods, spices, and presentation will be key to maintaining the high standards of our kitchen. You will work closely with the Senior Chef to design menus, source ingredients, and ensure that every dish reflects the unique flavors of Kerala.
Key Responsibilities:
- Menu Creation and Execution:
- Design, develop, and execute an authentic Kerala menu featuring both vegetarian and non-vegetarian dishes, including seasonal and regional specialties.
- Innovate within the traditional boundaries of Kerala cuisine to cater to diverse customer preferences while maintaining authenticity.
- Culinary Excellence:
- Prepare a wide range of Kerala dishes, including staples like dosa, appam, puttu, idiyappam, Kerala parotta, fish curry, beef fry, avial, sambar, and payasam.
- Master the use of Kerala spices and cooking techniques, ensuring each dish is prepared with precision and consistency.
- Create traditional Kerala desserts, such as payasam, halwa, and pradhaman, that complement the main menu.
- Ingredient Sourcing and Kitchen Management:
- Collaborate with suppliers to source authentic and high-quality ingredients, or identify suitable substitutes available in the UK market.
- Maintain an organized and efficient kitchen, ensuring compliance with UK food safety standards, allergen regulations, and hygiene practices.
- Team Collaboration and Development:
- Work closely with the Head Chef and kitchen team to ensure smooth operation and timely service.
- Train and mentor junior chefs on the intricacies of Kerala cuisine, promoting a culture of continuous learning and excellence.
- Customer Engagement:
- Occasionally interact with customers to explain the cultural significance of dishes and receive feedback to enhance the dining experience.

Qualifications and Experience:
- Professional Experience:
- Minimum 5 years of experience specializing in Kerala cuisine, with a strong portfolio of work in South Indian restaurants.
- Previous experience working in an international setting, particularly in the UK, is highly desirable.
- Culinary Skills:
- Mastery of Kerala cooking techniques, spices, and traditional dishes.
- Proficiency in preparing both vegetarian and non-vegetarian Kerala dishes, with an emphasis on seafood.
- Educational Background:
- Formal culinary training from a recognized institute, with a focus on South Indian or Kerala cuisine preferred.
- Up-to-date certification in food safety and hygiene (Level 2 or 3 Food Safety & Hygiene for Catering or equivalent).
