Sous Chef – Hornsbury Mill, Chard, Somerset
Hornsbury Mill is a beautiful Grade II-listed historic watermill set in five acres of stunning landscaped gardens with a lake, fountains and abundant wildlife in the heart of the Somerset countryside.
We are looking for a talented and enthusiastic Sous Chef to join our kitchen team and work for our incredible and experienced Head Chef.
This is an exciting opportunity to be part of a new chapter in the kitchen at this popular wedding, events and boutique hotel venue. You will help deliver both fine dining and gastropub offerings in our Wheel Room restaurant, weddings, private functions, Sunday roasts and more – using fresh, seasonal produce.
Key Responsibilities
- Support our talented head chef in the day-to-day running of the kitchen and step up when required, particularly on his days off
- Prepare and cook high-quality, flavourful dishes to a consistently high standard
- Supervise, train and motivate junior kitchen staff
- Assist with menu development, specials and creative use of seasonal ingredients
- Manage stock control, ordering and kitchen organisation
- Maintain the highest standards of food hygiene, health & safety and allergen management
- Work flexibly across restaurant service, events, weddings and functions
About You
- Proven experience as a Sous Chef or strong Chef de Partie in a hotel, restaurant or events kitchen
- Excellent culinary skills with a real passion for fresh, seasonal produce
- Strong knowledge of food safety and hygiene procedures (Level 2 Food Hygiene Certificate essential; Level 3 or equivalent desirable)
- Experience with allergen control and accurate menu labelling is highly valued as is meticulous paperwork and food hygiene knowledge and execution
- Good leadership skills with the ability to lead by example in a small team
- Flexible and reliable – happy to work early shifts, late evenings, weekends and event days as needed
- Positive, proactive attitude and genuine passion for hospitality
Desirable
- Previous experience in a wedding or events-focused kitchen
- Creative flair for menu innovation and presentation
- Knowledge of takeaway and delivery operations
