Chef de Partie | The Ram Inn, Firle
Salary: £28,000 – £32,000 per annum + Tronc
Position: Full-time (Mix of straight and split shifts)
Location: Firle, East Sussex (Reliable transport recommended)
About Us
The Ram Inn is a bustling, independent country pub and 8-bedroom hotel in the heart of Sussex. Our kitchen philosophy is unapologetically ingredient-led and hyper-seasonal. We don’t do corporate, static specs—we adapt to what is fresh and wild, printing a brand-new menu for every single service.
We are looking for a passionate, driven Chef de Partie (CDP) to join our tight-knit kitchen team of 7. If you want to escape microwaved pub food and learn how to cook with true, raw provenance, this is your kitchen.
Why Join Us?
- A Real Culinary Education: Learn how to handle, prep, and respect elite organic produce from Shrub, quality butchery from Calcot Farm Produce, and bespoke harvests from Chefs Farm.
- Creative Input: We want your ideas. You will have a voice in daily changing menus and the freedom to help create daily specials.
- Career Progression: Work closely with a skilled Head Chef and Sous Chef who will actively train you for the next step in your career.
The Role & Responsibilities
- Section Ownership: Take full responsibility for running, prepping, and maintaining your designated kitchen section.
- Hyper-Seasonal Execution: Adapt quickly and skillfully to a fast-paced kitchen where the menu changes every single service.
- Stock & Waste Management: Keep your section organized, manage daily prep lists, and minimize food waste through smart stock rotation.
- Hygiene Standards: Maintain a spotless workspace and strictly adhere to food safety and allergen legislation.
Who You Are
- Passionate About Food: You have a genuine love for fresh ingredients and want to elevate your cooking skills.
- Experienced: You have solid experience as a Commis Chef looking to step up, or are already an established Demi/CDP in a fresh-food environment.
- Adaptable & Level-Headed: A daily changing menu requires a sharp mind, good organizational skills, and a positive attitude under pressure.
What We Offer
- Competitive salary + a fair, generous share of tronc (tips).
- An energetic, supportive, and respectful independent kitchen culture (no toxic shouting here).
- Free meals on duty and staff discounts.
Pay: £28,000.00-£32,000.00 per year
Benefits:
- Company pension
- Discounted or free food
- Flexible schedule
- Free parking
- On-site parking
