Senior Cook / Kitchen Lead / Junior Chef de Partie — Thrift Taco

Thrift Taco is an East London food brand serving chef-driven Mexican food from our residencies at Howl at the Moon and Great Beyond Brewing. We focus on great ingredients, housemade sauces, strong cooking, and creating a fun, welcoming atmosphere without taking ourselves too seriously.
Important: This is a full-time role working across evenings and weekends. Typical schedules are five days per week with two days off. Weekend availability is essential.
We're looking for a strong cook, Junior Chef de Partie, Senior Line Cook or similar who wants more responsibility and the opportunity to grow with the business.
You'll work closely with our founder, helping deliver excellent food while supporting the continued development of our kitchens and team. Over time, we want this person to become capable of running service independently.
What you'll do:
- Food preparation and service
- Run kitchen service confidently
- Open and close the kitchen
- Maintain quality, cleanliness and food safety standards
- Manage stock and receive deliveries
- Support and train junior team members
- Help improve kitchen systems as we grow
We're looking for someone who is:
- Reliable and organised
- Calm under pressure
- Comfortable in fast-moving services
- Available to work evenings and weekends
- Comfortable taking responsibility and working independently
- Low ego and easy to work with
- Interested in learning and improving
Experience in pubs, casual dining, street food, independent restaurants or similar environments is particularly relevant.
We care far more about attitude, reliability, ownership and willingness to learn than fine dining experience or fancy CVs.
