COCKTAIL BAR MANAGER
Salary up to £35,000 per year, depending on experience | Plus service charge where applicable under the tronc policy
Full-time, permanent | Cardiff | Evening, weekend and late-finish availability required
THE ROLE
Run the bar operation in one of our Cardiff restaurants. You will lead service, train the team and take ownership of drink quality, beverage gross profit, stock, waste and labour.
This is a hands-on management role. You will work behind the bar during busy services while using accurate preparation, ordering, stock and rota controls to keep the operation fast, consistent and commercially sound. You will work closely with the restaurant General Manager and kitchen team.
WHAT YOU WILL OWN
- Bar preparation, service, close-down and handover.
- Cocktail, wine, spirits, beer, coffee and presentation standards.
- Seasonal cocktails and drinks promotions with clear costings and margin targets.
- Beverage gross profit, ordering, stock counts, transfers, breakages and waste.
- Demand forecasts and bar rotas that match staffing to expected trade.
- Recruitment, induction, training, coaching and day-to-day performance.
- Guest service and prompt complaint resolution.
- Bar delivery for events, private bookings and restaurant promotions.
- Supplier relationships, deliveries and invoice checks.
- Licensing, Challenge 25, allergens, food safety and health-and-safety compliance.
- Cleanliness, equipment care, cash controls and bar security.
WHAT SUCCESS LOOKS LIKE
- The bar is prepared before every service and delivers drinks quickly and consistently.
- Stock counts, ordering and transfers are accurate; unexplained loss and waste are investigated.
- Beverage gross profit and labour remain on target without weakening service.
- Rotas match forecast demand and the team has the skills required for each service.
- New cocktails and promotions are properly costed and produce measurable sales or margin.
- Licensing, allergen and health-and-safety standards are followed on every shift.
- Guests and restaurant managers receive calm, practical resolution when problems arise.
WHAT WE NEED
- Experience leading a busy cocktail or premium hospitality bar.
- Strong cocktail skills and practical knowledge of spirits, wine, beer and coffee service.
- Direct responsibility for beverage GP, stock, waste and labour.
- A record of training staff and improving service standards.
- Clear communication and sound decisions under pressure.
- Flexibility for evenings, weekends, late finishes and peak periods.
- A personal licence or APLH is useful but not essential.
INDUCTION AND SUPPORT
We will provide a structured induction covering our restaurants, drink standards, menus, suppliers, ordering and stock routines, service expectations, licensing procedures and management reporting. You must bring the bar-management experience, leadership and commercial judgement required for the role.
