3-WEEK SUMMER Dinner Evening Head Cook/Kitchen Chef
We are seeking an experienced and driven Dinner Head Chef to lead evening kitchen operations for a 3-week summer assignment at Trinity Laban in London. You will take full ownership of the dinner pass, delivering daily specials and a set menu to a consistently high standard, while overseeing chilled salads, desserts, and drinks service.
This is a senior kitchen role suited to someone who thrives under the pressure of dinner service, commands the respect of their team, and takes genuine pride in the quality and presentation of every plate that leaves the pass
Duration: 3 weeks
Schedule: 7 days a week, 2:00 PM – 9:00 PM
Location: On-site (Trinity Laban, SE8 3DW)
Start Date: 9th - 30th August 2026
Key Responsibilities:
- Lead and manage dinner service from the pass, executing daily specials and a provided set menu to recipe and quality standards
- Oversee the preparation and presentation of chilled salads, desserts, and drinks throughout service
- Manage and direct the kitchen team during service, maintaining pace, standards, and morale
- Ensure all food produced meets the company’s recipe specifications, quality benchmarks, and presentation guidelines
- Maintain strict compliance with food safety, allergen, and hygiene regulations at all times
- Monitor and manage food temperatures, storage, labelling, and handling in line with HACCP principles
- Oversee kitchen set-up and full close-down at the start and end of each shift
- Communicate clearly with front-of-house teams to ensure smooth and timely service delivery
- Proactively flag any allergen or dietary requirements to the team and ensure correct handling
Requirements:
- Level 2 Food Safety & Hygiene Certificate — current and valid (essential)
- Formal allergen awareness training or equivalent demonstrable knowledge (essential)
- Proven experience as a Head Chef or Senior Chef de Partie in a professional kitchen environment
- Strong track record of managing a kitchen team through busy dinner service
- Excellent understanding of HACCP, food safety legislation, and allergen management
- Ability to work efficiently and calmly under pressure during peak service
- Confident reading and executing from a provided menu and recipe pack
- Reliable, punctual, and committed to the full 3-week assignment including weekends
Pay: £110.00-£126.00 per day
