Role Overview
The Cost Controller oversees all food, beverage, and operational cost management across the resort, using Procure Wizard to track purchasing, analyse spend, and enforce supplier compliance. You’ll partner closely with culinary, finance, and procurement teams to maintain profitability without compromising the resort’s luxury experience.
Key Responsibilities
- Procure Wizard Management — Maintain accurate product lists, pricing, supplier catalogues, and purchase workflows. Ensure all departments follow correct ordering procedures.
- Cost Control Analysis — Monitor daily, weekly, and monthly cost trends across F&B, housekeeping, spa, and engineering. Identify variances and recommend corrective actions.
- Supplier Compliance — Verify deliveries, pricing accuracy, and contract adherence. Resolve discrepancies with suppliers and escalate issues when needed.
- Inventory Oversight — Support stock counts, investigate variances, and ensure accurate stock valuation.
- Menu & Recipe Costing — Work with chefs to maintain up‑to‑date recipe costs, monitor GP margins, and evaluate the financial impact of menu changes.
- Reporting & Forecasting — Produce weekly cost reports, dashboards, and KPIs for senior leadership. Support budgeting and forecasting cycles.
- Process Improvement — Identify inefficiencies in purchasing, stock control, and supplier management. Implement improvements that enhance accuracy and reduce waste.
- Cross‑Department Collaboration — Partner with department heads to ensure cost awareness and adherence to financial controls.
Required Skills & Experience
