We’re an established independent Italian wine bar in Edinburgh, and we’re about to open Bacco’s Kitchen next door — a new kitchen focused on handmade, fresh pasta and Italian cooking.
We’re looking for an ambitious hospitality professional to join us as Assistant Manager and play a genuine role in building what’s next.
£34,000 salary + £3–£6 per hour in tips, 40 hours over 5 days, with Mondays closed.
The role
You’ll work with the owner and help run Bacco Wine and Bacco Kitchen day to day. When the owner isn’t there, you’ll be trusted to take responsibility for the team and the shift.
You’ll be involved in:
● Leading the team during service
● Opening and closing
● Cashing up
● Training and supporting team members
● Stock control
● Maintaining high standards of service
● Handling problems confidently when they arise
● Making sure the business runs smoothly when you’re in charge
Previous management experience isn’t essential.
You might currently be a strong senior waiter, supervisor, bartender or hospitality professional who knows you’re ready for more.
What matters to us is attitude, reliability, initiative and genuine hospitality instincts.
What we’re looking for
You should:
● Be passionate about hospitality and great service
● Enjoy taking responsibility rather than waiting to be told what to do
● Be confident leading a team
● Stay calm and organised when things get busy
● Have excellent attention to detail
● Care about food, wine and the guest experience
● Want to learn and develop
Wine knowledge is desirable. Passion is mandatory.
We’ll provide wine training and support your development.
What we offer
● £34,000 salary
● £3–£6 per hour in tips
● 40 hours / 5 days
● Two days off per week
● Mondays closed
● Wine training
● Staff meals
● Pension
● Additional staff benefits
● Genuine career development
● The opportunity to help build Bacco Kitchen from the beginning
Why Bacco?
We’re an independent business, so your ideas actually matter.
Bacco Wine is already established, and Bacco‘s Kitchen is the next chapter. You’ll have the opportunity to help shape the team, standards and day-to-day operation of both.
We’re looking for someone who wants to learn, lead and grow with us — not someone who simply wants another job in hospitality.
If you’re ambitious, passionate about what you do and ready to take the next step, we’d love to hear from you.
Pay: £34,000.00 per year
Benefits:
- Company pension
- Discounted or free food
Work Location: In person
