HEAD CHEF / FIRST HEAD CHEF OPPORTUNITY PAZZO | BRISTOL
We’re looking for someone to take the lead at Pazzo.
You might already be an experienced Head Chef looking for a new challenge. Or you might be a talented Senior Sous who is ready to take on your first kitchen.
Either way, we’re less interested in ticking boxes on a CV and much more interested in how you cook, how you lead people and what you could bring to Pazzo.
Pazzo is an established Bristol restaurant with a beautiful dining room, a fantastic kitchen and a strong team already in place. We’re looking for someone who wants to take ownership of the food, develop the kitchen and help shape the restaurant’s next chapter.
THE ROLE
This is a genuine leadership position with the freedom to put your own stamp on Pazzo.
You'll lead our kitchen team and take responsibility for:
- Menu development and the creative direction of the food
- Leading and developing the kitchen team
- Delivering consistently brilliant services
- Food and labour cost management
- Rotas and kitchen staffing
- Training and developing chefs
- Stock control
- Supplier relationships
- Food safety and EHO standards
- Creating a positive, organised and ambitious kitchen culture
You'll have the support and experience of the wider Bianchis team around you, but we're not looking for somebody to simply execute someone else's ideas.
We want Pazzo's Head Chef to feel ownership of their kitchen.
WHO WE'RE LOOKING FOR
We're looking for a talented chef who loves restaurants, loves cooking and knows how to get the best out of people.
Experience with Italian food, fresh pasta and great produce would be hugely valuable, but we're equally interested in chefs with strong restaurant backgrounds who understand the style of food we love and are excited about taking it somewhere new.
You don't necessarily need to have been a Head Chef before.
If you're a strong Senior Sous who has been waiting for the opportunity to run your own kitchen, we want to hear from you too.
We're interested in people from different kitchens, backgrounds and career paths. What matters most to us is ability, attitude, creativity and leadership.
WORKING LIFE
We believe great restaurants shouldn't depend on chefs routinely working ridiculous hours.
The role is structured around approximately 40–45 hours per week. As with any senior restaurant role there will occasionally be times when extra support is needed, but excessive hours shouldn't be the norm.
We want someone who can build a strong kitchen and a strong team, rather than a kitchen that only functions when the Head Chef is there.
ABOUT BIANCHIS
Bianchis is an independent Bristol restaurant group built around good food, good people and restaurants with their own identity.
The group currently includes Bianchis Restaurant, Pasta Ripiena, Cotto and Pazzo, alongside our central kitchen and catering operation.
Our central kitchen produces fresh pasta and bread for the restaurants as well as supporting our outside catering, nursery food business and food truck.
That wider infrastructure means our Head Chefs can concentrate on what matters most: their restaurant, their food and their team.
