Assistant Restaurant Manager
Location: Pho & Roll, 15–19 Jeffrey Street, Edinburgh EH1 1DR
Salary: £30,000–£34,000 per year

Pho & Roll is looking for an experienced, reliable and hands-on Assistant Restaurant Manager to join our growing team in Edinburgh Old Town.
Working closely with the Restaurant Manager and owners, you will help ensure the smooth day-to-day running of the restaurant, support the team during busy services and maintain consistently high standards of hospitality.
Key Responsibilities
- Support the Restaurant Manager with the day-to-day operation of the restaurant
- Lead and organise shifts when required
- Supervise and support Front of House and Bar team members
- Allocate duties and organise staff breaks
- Help maintain high standards of customer service, cleanliness and presentation
- Support staff training, onboarding and development
- Assist with staff rotas and maintaining appropriate staffing levels
- Handle guest enquiries, feedback and complaints professionally
- Support opening and closing procedures
- Assist with cash handling and daily cash-up procedures
- Help monitor stock levels, deliveries and wastage
- Work closely with the kitchen team to ensure smooth and efficient service
- Ensure company procedures, food safety, allergen awareness, licensing and health & safety standards are followed
- Step in for the Restaurant Manager when required
- Lead by example and work alongside the team during busy services
What We’re Looking For
- Previous experience in restaurant or hospitality management
- Experience supervising or leading a team
- Strong communication and organisational skills
- Reliable, professional and well organised
- Confident handling busy services and difficult situations
- A positive and hands-on approach
- Good understanding of customer service and restaurant operations
- Flexible to work evenings and weekends
- Ability to work well with both Front of House and Kitchen teams
Vietnamese or Asian restaurant experience is welcome but not essential. Full training on Pho & Roll’s menu, systems and standards will be provided.
