This role is perfect for someone with experience as a CDP aiming to build on their skills and knowledge, or looking to step up to a Sous role in a busy kitchen. We are looking for a passionate chef with modern ideas to join a fully staffed team but bring fresh ideas and help to raise the overall standards of the current setup. On a busy service we can easily do 200 covers, you must be able to organise yourself and keep your calm. We put a wait on food and prioritise quality over speed, however this is not a job for a stress head!
We are an Independent venue and your mind set must reflect this. We employ humans and treat our team as such, each one of us have different wants and needs and a successful team is created with this in mind. However standards must be maintained and friendly discipline is expected when needed.
We cook a classics menu, catering to the seasonal crowd that demand fish and chips etc. We cook all our food with pride and have a street food section consisting of burgers, fried chicken, nachos and sides that fly out. Our specials in the summer are lighter and revolve around fresh catches.

Welcome to The Rashleigh Inn, Polkerris. PL24 2TL
We are a Freehouse situated in the coastal village of Polkerris, in-between Fowey and St Austell and right on the beach. An absolutely stunning location both inside and out. We can do 350/400 covers a day in the summer and 25 in the winter, so our team are all flexible and capable of stepping into every aspect of service and kitchen organisation.
About you:
- You must have pride in your work and care about the food you serve
- Be a team player and help other sections out when needed
- Positive attitude and a desire to further yourself and the pub by taking care of your work
- You will know your way around a kitchen and be able to fit into a team that is very settled, but using your maturity to drip feed new ideas into our setup. Like every kitchen we need evolution, but this is a tweaking and not a complete overhaul. New ideas and inputs are always welcome.
About the job:
- We are open 7 days a week and you must be flexible to work different shift patterns. NO SPLITS!
- We have specs for all our recipes but we expect chefs to taste and season as required, this is not a cook by numbers operation. These specs are in need of organisation though, so an understanding of common sense is a huge plus!
- General cleaning and housekeeping of kitchen - not piling everything onto the KP's but keeping the team motivated to clean. KP's are used on busy shifts, not on quiet winter shifts, we stay on top of cleaning ourselves and outsource as needed.
- Our kitchen closes at 8pm and on a busy day you will be finished by 10pm after the clean down.
- We are a very settled team and don't have the standard brigade system (yet, we are working towards that though), our core chefs work together with the owner to split responsibilities such as ordering, rotas and standards. This is what we are gradually working towards changing as we get the right people in. Sharing workloads and responsibilities are vital skills to having a great work life balance.
- Days off are days off. You won't be bothered when you are away from work.
We offer:
- £14 per hour, starting and dependent on skills. No salary. If you work extra hours you get paid for them. (100% share of tips on top).
- Flexible working conditions, we serve until 8pm every night and don't finish too late.
