Colonnade is Bristol Beacon’s restaurant and hospitality space, operated by Graysons within one of Bristol’s leading cultural venues.

We are looking for a hands-on Sous Chef to join our established kitchen team at Colonnade. This is a fresh-food role within a busy, varied venue environment, covering restaurant service, pre-show dining and wider Bristol Beacon activity.
The role would suit a confident Sous Chef, or strong Junior Sous Chef ready to step up, who is organised, calm under pressure and passionate about delivering consistently high standards.
Key Responsibilities
- Support the Head Chef with the day-to-day running of the Colonnade kitchen
- Deputise for the Head Chef in their absence
- Lead kitchen services across restaurant, pre-show dining and events
- Support menu development, seasonal changes and dish costing
- Assist with ordering, stock control, stock takes and waste management
- Maintain strong food quality, presentation and consistency standards
- Support nutritional, calorie and allergen analysis where required
- Ensure all dishes are produced in line with agreed specifications
- Train, support and develop junior chefs and kitchen team members
- Maintain excellent food safety, health & safety and hygiene standards
- Ensure HACCP, allergen controls, labelling and stock rotation are followed correctly
- Support the wider hospitality operation where required, including events and large-scale venue activity
What We’re Looking For
Essential
- Previous experience at Sous Chef level, or strong Junior Sous Chef experience
- Experience working with fresh food and seasonal ingredients
- Strong understanding of food safety, allergens and kitchen compliance
- Ability to lead service and support a team under pressure
- Good organisational and communication skills
Desirable
- Experience within restaurants, contract catering, events or venue-based hospitality
- Experience supporting menu writing, ordering and stock management
- Understanding of GP, portion control and cost management
- Interest in modern British / European food styles
